Excellent. Just come across your channel. Been cooking currys for a while not using base gravy. Recently bought a pressure cooker nit for curries, and I’ve actually not used it yet. So watching this and to watch many more of your videos. I’m not going to put the pressure cooker to use… 👍

Great use of a pressure cooker good tip, especially adding the spices individually, not tried that yet. When I add that amount of onion I notice all the oil is quickly absorbed which makes frying the spices (bhoona) trickier, glad it's not just me! Sometimes I add a touch more (homemade) ghee in at that stage to ensure they don't burn and that the spices fry. And I was just about to message AL and accuse him of pinching your lemon stylie 🤣😆😂
Great video Julian, thanks for the time and effort. Obviously it's trial and error but I'm going to attempt this in my ninja foodie which has a pc function. However it only has a high/low setting - any advice which one to do it on? Cheers

@@leviteish No my prestige cooker has a small knob on the lid with 3 positions low mid and high, just above the release button i did have a tower which had a weight marked with 3 lines for doing the same thing ,
Got a video on home made Ghee yet, it's so flavourful with a delicious aroma of nutty toffee and so superior to that hideous shop bought cheesy rubbish.
I've had your books for years, and I notice that your new material seems to take a slightly different approach. For example, the books emophasise the importance of seasoned oil, base gravy, and so on. Your new videos seem to take a simpler approach. Could you discuss where your thinking has evolved since the early days?
