I'm big on fusion and lots of great tips here in this great video. I've also discovered using oil first as the onions soak it all up then add Ghee after just before spices to ensure a Bhuna (fried spices). Thinker cut garlic also spot on, burn it and you'll have to chuck the whole dish! But that shop bought Ghee is like rotten feet and seriously taints the dish, its shocking and should be avoided. Make you own Ghee it's so simple and smells and tastes like rich toffee, TOTALLY different. I need one of those deeper ally pans, good idea, I use a lid now and again to prevent splash of dishes made with larger volumes of base gravy. Interesting, I recently made my own Pat Chapman Balti masala and it transformed my fusion, the flavoured oil coming out and depth of flavour was tremendous, be great to see you make some and it's interesting the paste is fully cooked before storage and use, similar to Pataks I assume. Game changer!

iv been told by a good friend that has an indian takaway that a table spoon of garlic garlic pickle really works well with this dish and some chilly flakes on top as well to finish it off

Iv just cooked something similar(lots of garlic ) for our Friday night curry having watched your Als and Latiffs channels it’s now 10 weeks since I ordered a takeaway Mrs P now thinks my curry’s are better than takeout I’m too modest to admit that 😎😎😎Thank you once again

From Durban,Kwazulu Natal,South Africa luv watching explained in dtl however the noise from metal spoon most disturbing I turn volume down then I can't hear the explanation..is it possible to use a wooden or plastic spoon

Laughed when I saw the two dhabas as part of your prep. So my second dhaba arrived today....two is just so much better than one!!! Cannot wait to use two dhabas together...the dynamic duo!!! Lots of nice tips packed into this recipe....timing of ghee, green chiles tomatoes combo and not to go overkill with Mr Naga....less is more, base gravy timing, etc. Ahhh...Naga pickle is nice but cannot live without the explosive taste that fiery green chiles produce.

Your knives on the magnetic rack are upside down. If they slip off they will either bend the blade or stab someone. Us chefs store them with the handle pointing down and the blade pointing up.
