Considering the popularity if the DF64 it was only a matter of time before they upped the ante; and with the DF83 consider the ante upped. With burrs often only seen on commercial grinders sold for at least double the price, this all-around coffee grinder on the surface is a great buy, but how does it perform beyond the numbers on it's spec sheet?

I actually love the plastic cup from my DF64-so nice to be able to shake and re-shake the grinds in your portafilter with the cup still on top stopping any spills, until they the bed is relatively flat. With the clear cup, you can judge that super easily.

Great content as always. Thanks. The cable entering from the side could be to avoid cramping it when placed on kitchen countertops. This way the grinder can be pushed closer to the backsplash when space is a premiuim

I think the commercial grade gear is overlooked but longevity and reliability is a good thing. I bought a second hand mazzer sj and I've been using it for over 20 years. With SSP burrs it takes about 10-12 secs to grind 19-20 g. Its built like a tank. I don't think it will ever die.

Mine was delivered today with the stock burrs. I quite like it so far although it took a while to dial in. For some reason. I got an aluminium dose cup rather than a plastic one. My other grinder is a Niche, which I also like (it is basically bomb proof).

It's a nice grinder, I'm really enjoying it and I hear they are working on a solution for the declumper rather than people taking it out (which for me lead to a lot of grinds spraying).

@@Sprometheus It’s literally the cause of your inconsistent grind level at pourover range. Removed mine, and it’s much much closer to the consistency of my 98mm SSP Brewing burrs. Though not as tasty. Lots of valuable information on various forums. The declumper is not letting the grounds exit fast enough, and causing regrinding which is producing “fines”.

It’s strange that Turin picked 83mm for this grinder. There seem to be more burrs available at 80mm. Anyone know if it would be possible to fit an 80mm burr carrier in and use this with some Ditting Lab Sweets?

Years ago I upgraded a Mazzer Super Jolly for a Niche Zero because I wanted a more kitchen friendly grinder with a better work flow. I missed the shots I got from the SJ so upgrading again to this from the Niche feels like I'm coming back home. Not sure yet if I'll get SSP burrs but I'm enjoying my DF83. Takes a bit to get used to the work flow but is a solid choice and really feels like how you described, a commercial grinder transformed for the home at a prosumer price

As an owner of a Mignon with 50mm burrs and a Baratza Encore, I tend to struggle with the value and return on investment from looking at bigger burrs. I'm getting good shots of espresso and filter with the basic burr sets, so I'm really looking to folks like yourself to help provide some insight on how it impacts the cup. I'm skeptical that the differences are night and day, but happy to be proven wrong.

I own 6 grinders now (one is a EK-43 😬), and for filter, I prefer my mignon notte, for some reason. Its very sweet, but clean enough that brewing is a breeze and easy to differentiate flavors. I feel like that $300 ish mark is the height of diminishing returns.

I’m in a similar boat, same grinders too. I was constantly eying the DF64P after having some Mignon issues (losing my burr alignment over time). But it seemingly stopped. And I keep wondering, “would I get better coffee from a DF64P over my Mignon?”

Is there any difference in longterm durability between the stock burrs and SSP? Like are the stock burrs good for 1000 lbs and the SSP good for 5000 lbs?

I come from a time in coffee when 64mm was big. The mazzer super jolly was regularly crammed into kitchens that simply couldnt support it. These current grinders are amazing and the price points theyre hitting really get me thinking. Youve done a great job here of cutting through the hype. I have an atom 75 and when this grinder was released I was feeling a bit left behind. I think it would be useful to do some back to back burr size taste tests. I know I can taste the conical vs flat difference, but Im curious if the burr size (some how controlled for the cut of the burr) makes any difference in the cup. You allude here that its only saving time, which is interesting.

Think it depends on the burrs you compare it to and what you get out of it. I know with bigger burrs you get more texture, which could be a great thing when using a high clarity burr set like the SSP

@@gregorio5543 Im sorry but a lot of the descriptions I hear about the difference between burrs starts to sound like audiophile descriptions of different DACs or amps. Highly relative and difficult to prove at best.

@@gregorio5543i read bigger burrs gave you better clarity (easier to distinguish flavors) whereas smaller burrs gave better texture but the taste was muddier (harder to pick out flavors)

Your retention tests are interesting to me as with bellows I'm getting on average about 0.3-0.5 retention. Seldom get 0.1g of retention. That's my reasons for returning this grinder and going back to the Niche Zero

My eureka silencio started stalling and many attempts later is now a $700 decoration. I am using the Kinu hand grinder and I am pleased with its performance. That said, I need a motorized grinder and the single dose variety I believe suits my espresso only work flow. I won't be buying eureka again. the DF83 looks like a very valid choice. What I am curious about is a comparison to the niche duo. It also seems like a reasonable choice. It would seem that the niche, without a knocker or other remnant removal feature, would be the only reason to not get it. Doing a comparison of these two would seem a good topic for the next publication. If there are others out there with relevant experience I would love to hear it. Thanks.

Im just getting into espresso completly new but can t descide what Equipment to start with. I want to use diffrent beans through out so single dosing should be right, but can t decide between DF64 or DF83. As of the machine I m still choosing between Rocket R58 or mozzafiato.

I did the same thing. I just purchased the v4 with ssp HU for cheaper than the 84, and I’ve got ssp’s - overall, I think/hope it was a good move haha.

Thanks for the content. I have DF64. At first, it is virtually trouble free. But after using for about two years, it becomes no longer trouble free. I think, time will also tell for DF83 too.

@@001jozef When I moved the grind setting from 90 to 65 or from a certain number to lower one, the burrs seem to get stuck. So I have to open it and clean the burrs before I could reuse it. Fortunately, I use this DF64 mostly for V60 or Delterpress.

As I look to move up from my old, 2011, K10 Conic Fresh, I am constantly wondering why so many of the flat burr grinders are running at such high RPM. I understood that high-speed burrs are not a good thing. Am I mistaken in that belief?

I'm searching for my first motorized grinder for my daily use (currently using a manual one for my espresso), and this is one of my considerations. I have espresso daily, and occasionally have filter coffee during the weekends or if I suddenly get some bit of free time to do it. But I also do cold brew when I feel like it, or when I need to make the most of my older beans. Would this grinder work with cold brew? Thanks!

How good would it be with stock burrs against the Fellow Ode with SSP MP for filter coffee? Anyone? I'm really considering it for espresso but I'm still be wondering if the Ode could have a place at home once the DF83 is in.

I prefer the stock burrs from the DF83 for espresso, and even for filter too. Honestly, I do love the MP burrs for both espresso and filter on my Lagom P64 but mainly for black coffee only, the steel burrs tend to offer a wider sweet spot across the board. I know it’s not particularly fashionable to say this, but those high end burr sets are very highly focused and don’t work as well on a wide array. The outlier to that could the be lab sweets.

Looking to move away from my conical Niche to something with flat burrs to enhance the fruity/floral/subtle flavors of my espresso (or at least avoid the "conical" deep/choclatey taste for a change-up). Would the stock burrs fit the bill or would I need to go all the way to the SSP burrs to really notice a difference between this grinder and the Niche?

Can't wait to see what modders do to it. DF grinders kinda remind me of Bethesda games in that the community transforms them into something that transcends their slightly janky, but very promising base form.

I have seen some mods for the DF64 that seem more or less to fix issues like clogging, clumping, etc, but nothing crazy. It seems the DF line also does it’s due diligence to make meaningful upgrades. Honestly I don’t know what I would change or mod on the 83, but it’ll be interesting to see what ideas people have.

Other than the speed, is it fair to say that another advantage vs the 64mm models is the more premium build and fewer required mods compared to the DF64 and the ability to do both brew and espresso compared to the DF64P?

Yep, you nailed it on the head. The older versions of the DF64 does need some work, the v4 may have fixed those issues though. And yeah, the ability to grind all around is what the 83 has over the 64P

Well the price tags are similar, but the Niche and the DF83 are very different overall. Flat burr grinders like the 83 will produce more clarity, acidity, while the Niche with conicals can produce more complexity and texture. It would depend on what you want from your coffee.

Interesting. I currently have an Eureka Mignon Specialita that I've used for 2 years and honestly, I've never been truly happy with. I'm having a very hardt ime with consistency in my results. Variable retention, uneven grind particles and overall hard to repeat results. I was considering this one as an upgrade and more versatile product (mainly espresso drinking 80-20 filter). Price is a bit daunting and hearing the DF64 is basically the same but slower certainly surprised me. I couldn't care less about speed in my kitchen for morning coffee, certainly not in seconds. A bit of an odd product then for home users.. other than bragging rights, what's the point ? I'm not being sarcastic or factitious, honest question :) Thanks for another excellent and to the point video.

I get what you’re saying for sure. And of course I’m sure there are plenty of coffee folks who would disagree with my take on this, but bigger burrs to me are only just grinding faster. And I think the “bigger is better” view isn’t the case. I can’t speak for others and their motivations, but honestly for me it was a blend of curiosity, chasing better coffee and more knowledge haha.

@@Sprometheus 100% agree but don't have the possibility to try products like you do to validate that feeling, so thanks :) I guess there might be a slight improvement in uniformity for a given burr at a larger size but the price difference is 'Extreme' between the 64 and 83, almost twice as expensive so value wise, it's an entirely different proposition. I'll have to read up on the 64 v4 improvements vs original ones as most reviews came in the early days. Anyways, thanks for taking the time to reply and keep it up!

@@hankschrader2353 got the df64 and couldn't be happier! Manage great espresso ans pour over. The dialing process is a joy compared to the Specialita, retention is extremely minimal and maintenance (clogging, burrs getting covered in ground) is not an issue at all. Took it apart once in 6 months to find it clean! No screws to take out either. Only drawback would be that it is much louder

I love the v for its speed control and find that can really add a new fun variable, but they are still having stalling issues on low RPMs so the 83v2 may be the better bet in the long run. Plus the high speeds (1400RPM) create more fines, complexity, and full bodied shots so if that’s what you’re into the 83 will make you very happy.

So the only real advantage over a DF64 v4 would be the grinding speed? If that is the case, I don’t know if it is worth the extra $300 to save 6-10 seconds in grinding time. I’ve been contemplating between the DF64 and DF83 for an all around grinder. Thanks for this review!

That would be my takeaway. Bigger burrs grind more beans at a time, but I don’t think the coffee quality is increased, at least noticeably.

Reference to Wil Turner comments thread above, a big advantage for the DF64 is that more burr options are available at a cheaper price than for the DF83. I'm leaning towards the DF83 and hoping for the SSP Cast burrs in the future.

I think if you don’t have either, the 83 is worth it. I think because it grind faster the burrs don’t heat up as much and you get a bit more complexity out of it. Had mine for two months now and I’m preferring the flavour profile over my local coffee shops. It does grind so fast that it’s backs up and regrinds beans so you have to bellow a bit earlier or mod the declumper to allow a faster flow rate to truly get the full benefits of this grinder. Would be interesting to know if sprot pulled and shots with the fines reduction “mod”/bellows technique

Nice short review, I think they really are getting more and more things right, the cord is just a low cost easy implementation to make sure you can tock the grinder back next to the wall, retractable would obviously been better but well I seen worse on more expensive grinders. I don’t know exactly how I feel about that wave spring it’s another cheap easy solution, I really wished they looked at Option-o solutions much more elegant that would not be that expensive to implement. Also the aftermarket grind setting indicator is a bit half baked truth be told and the design of the grind setting dos look a bit cheap and lousy. I’m also never gonna fall in love with bellows. I do think low price that it’s finally a powder coated all metal body make it look far better and 83mm burrs in that price is attractive especially as SSP are working on a new Cast set and more will definitely come.

I really like my DF64 with SSP HU burrs after owning a Mignon Specialita with single dosing mods. The DF83 seems like a bigger and better option, but $350 for the SSP upgrade is gut wrenching. I wonder how the stock 83 mm burrs compare the the 64mm HU in mine.

@@classicrockonly The coffee improved and the workflow improved nicely as well. However, since I purchased the DF 64 preowned with SSP burrs already installed, I can't comment on whether the improvement was due to burr change or grinder change, or how the stock burrs compare.

Hey Marc, honestly I’d say in the hierarchy of how I’d rank them I would P64 on top, DF64 and then the DF83 at the bottom. The P64 for me hits a lot of marks I look for. Beyond just liking the design, it’s quieter, had a smoother operation, nicer accessories, variable RPM, and with 64mm burrs you have a TON of options. The DF64 wins over the DF83 for me purely because of the burr options.

I compared the DF64P with SSP HU and the DF83 with stock burrs, both dialed in to 18:36g ratio at ~27 seconds on my usual local light-medium roast blend. At first I thought the 64 HU definitely had greater clarity, but after using them for a few weeks, I found the 83 stock to have a more complex flavor in the cup. 64 HU might have had very slightly more brightness, but the complex flavors weren't there. This is all pretty subtle, as I found them to be quite similar. I'm looking forward to the SSP lab sweet that's being released, supposedly in March, which is more of a multipurpose burr set, and will hopefully bring a bit more clarity. Selling the 64P despite loving how easy it is to dial in on it, as I do find that I prefer the bigger burr flavor. I've also found it interesting that I sometimes enjoy the flavor more in the 83 when it's not extracted for too long...for instance, I was using a Honduran with some delicate flavor notes, and they were great when I had 45g within 18 seconds, but when closer to 1:2 at 25-30 seconds it became more bitter and the notes were hidden. Weird.

I get you, and the flavor differences, at least in some cases are very subtle. And in the case of espresso specifically, I want a bit more complexity as it leads to better balance. Clarity in espresso isn’t something I want all the time, but just for certain coffees and circumstances. Interesting to hear you prefer the bigger burrs flavor. I’d like to actually blind taste test them and see how they compare not knowing. I’ll have to put that on my to-do list, but currently side by side I found the difference minimal at best. But that’s the beauty of coffee and the breadth of flavors the human tongue can determine.

With anything as subtle as that, I‘d definitely always recommend doing blind tests (helped by a second person, if possible). You can‘t really take small differences serious; our brains are SO easily tricked by all kinds of expectations and influences, and it‘s something we can‘t just switch off even if we try. Only if you can reliably and reproducibly tell the difference without knowing which is which, do you know that a) they really exist in the first place, and b) if they‘re really big enough that it‘s worth it.

I Dont own one but id say df83 just cuz you get a different style of espresso from a flat burr and you can also do other brew methods with the 83. But with the ode you cant do espresso, so me id get the 83 between the 2

I recently picked up a df83, and with the ssp HU burrs , and I find that I'm getting more sweetness and more clarity out of my beans than I am with my niche. When using the same beans, the niche provides that expected bigger body, but less of a pronounced flavor profile. I still love the niche, esp when I want a really thick, chocolatey espresso, but I find myself using my df83 more often, because it actually supplies a decent body alongside the stark differences in flavor. I think they're great grinders to have side by side though, as a caveat, I make espresso only, so your experience may differ, but overall very happy with it.

My concerns from this vid are that it js finicky with excess fines ,(HU burrs), and that the83 isn't improved in cup quality over the 64.

I've found with both my Sette 270 and DF64 when brewing for filter, that I tend to go _finer_ instead of coarser. Reduces the amount of fines and although the start is slower, the flow is more consistent through the brew which doesn't clog as much. Finer grinding also sometimes means less coffee used (1-3g), which is a plus (keyword: sometimes).

Interesting, considering the 270 is conical and DF is flat I’d expect to grind coarser on the conical because they create more fines, and maybe a little finer on the flats. But if it’s working for you, and you’re getting results you enjoy then that’s all that matters.

​@@davidlogan2682 Hard for me to tell for sure, since I no longer own the Sette, but I _think_ I was grinding around 15-23 for filter. I usually brew V60 using J. Hoffmann's technique. yes, the bed was muddy, but coffee tasted good and that's all that mattered to me. :)

Another great review! In your opinion, DF83 or Niche Zero? I’m mainly an espresso and latte drinker. I have never purchased a grinder before but find myself needing to purchase one in the very near future as my wife got me a Linea Mini for my birthday. Here in Australia DF83 retails for about $1200AUD and the Niche is just over $1700AUD. Any thoughts, insights, or opinions on this would be very much appreciated 🙏🏾 9:55

I bought my Niche direct from the UK delivered to Australia for $1020. Don’t pay the inflated Aus prices (same goes for DF83). I’ve owned the df64 and would predict the DF83 is a better buy than the Niche, if they’re a similar price.

Great video, but I disagree on the point of "a commercial grinder at a prosumer price". For commercial usage duty cycle and lifetime are critical. If a grinder can't do more than 1lb back to back or can't grind for more than 30 shots per hour, or has a life time of less than 5,000 pounds, it won't matter on the quality or speed of grinding. Is there any duty or lifetime ratings for this?

I went back to your Espresso Anatomy video from 2 years back where you concluded that conical burrs promote the fruitier, brighter flavors. I’m curious as lately the scene is now saying that conical burrs are suited for med-dark roast coffees, as the extra particle fines help keep the puck adhered. There’s obviously some jumps in logic here but generally the vibe seems to be a high quality flat burr will bring more clarity to the cup and will do more justice for lighter roasts - which going back to your video those are the roasts you want bright and fruity in cup and you tapped conical to do that. My conclusion atm is flat burrs are great simply for their ability to be swapped for different profiles, and provided your grinder has the power overhead (like the DF83) that provides you another lever to pull to adjust flavor. To that end, the relationship between burr profile and flavor is still not well understood and is an emerging topic.

I wonder the same thing, I come to the conclusion that geometry of burr is very crucial. Df83 with stock burr give similar profile to Niche. New GG conical burr for Niche seem to improve clarity as well. However I think more recent flat burr mfg like SSP just come up with better clarity profile, that is why few years ago opinion won’t be valid anymore with more option in market.

I got a very hefty discount on mine. For $350 I think this is a difficult grinder to beat... Even at it's full retail price it's a solid performer. I'll eventually upgrade to SSP burrs as this is only a secondary grinder to play with.

My issue with the bellows isn’t the use, although I do find them unappealing on grinders looks wise, it’s a shortcut to proper engineering and chamber design.

Well it depends on how much you spend I say. If you spend less then 1k bellows can definitely be am acceptable compromise, but spending 2k or more then it’s simply not. For more then 2k I expect to see properly engineered grinders that remove the need for quick fix solutions.
