Thank you for this amazing recipe!! I have been waiting for it for a long time. Can I use jaggery powder instead of khand? Also can I make this in monsoon season? I am in Mumbai and there's no sunshine for days at a stretch.

Yeh lactofermentation nahi hai . Isse pickling kehte hai.. ismein lactobacillus bacteria nahi hota kyunki vinegar dalnese bacteria mar jate hai (acidity sehen nahi hoti bacteria ko ) Yeh probiotics nahi hai .. sirf taste similar hai isliye khatein hain.

Please get your facts right. Vinegar stops any fermentation from happening. These veggies will definitely taste good, but they cannot be called fermented.
