Easy Must Try Potato Recipe | Vegan | GF
Perfect as a main course or a side dish…
Ingredients:
-1.5 kg potatoes
-3 onions
-1 tsp toasted sesame seeds
-1 1/2 tsps turmeric powder
-1/2 tsp cumin seeds
-1 1/2 tbsps spice blend*
-2 or 3 tbsps olive oil
-Salt and pepper to taste
*Our spice blend:
-10g ground cumin
-10g ground coriander seeds
-5g turmeric powder
-5g paprika
-5ground cardamom
-5g garlic salt
-1g ground black pepper
-1g ground cloves
Method:
-To a pan of boiling water, add the turmeric powder, followed by a generous amount of salt, then the peeled and chopped potatoes. If your potatoes are pesticide free etc, then don’t remove the skins, there’s lots of goodness in there!
-whilst the potatoes are boiling, add roughly chopped onion to a pan and fry with a small amount of oil. Fry until lightly caramelised.
-Put the onions to one side once cooked and once the potatoes are boiled, drain and sauté in a frying pan with an adequate quantity of oil until golden.
-Now add your spice mix to the pan, add enough mixture to your taste, we like to add quite a lot! Cook until the spices are smelling cooked.
-Once the potatoes are all cooked, mix together with the onions.
-Serve with a sprinkling of sesame seeds and fresh parsley.
