Sheet Pan meals are awesome. I never thought about using Salmon in a fajita. I love the bright colours of the peppers. Very appealing. Lol 😂 so you also taught us how to make ceviche lol. I think you could have a food and wine article in a magazine or paper you really know how to describe flavours and aromas. The fajitas look marvellous and they took no time at all. I took note at lowering the temperature.

Hi, Jeff! Wow, those sheet pan salmon fajitas look great. I agree that you need to cut the salmon so that all the pieces are the same size--that way everything cooks evenly. I am glad that you added a variety of colors of bell peppers. Thanks for showing us how to cut bell peppers, too. I've been doing it wrong all this time, haha! You are right: putting the salmon in with the vegetables would have overcooked it. You are my go-to guy in regards to wine and fish! And yes, you do not want to marinade fish in an acid for too long or else you will ceviche, you are right, haha. Nice to hear that batteries are included with the timer. Wow, as always, that turned out perfectly. I love the pop of green from the avocado. Thanks for sharing!

Hey Jeff, we love fajitas here! Nice idea making a sheet pan bake; I usually use a Frying pan so your method is much healthier. Like the idea of the marinade too.
