Ratatouille is good but yours is several steps up from that. The ingredients you have used are so fresh and colourful. We are eating healthy here so this dish will be made in our house this week. Who needs meat when you can have this gorgeous Ratatoulle. You made it with such attention to detail and love how you cooked things at separately, and not just put everything in a pot. It came out so great Jeff. Love Francis Ford Coppola wines too.

Vegetarian food is my favourite so this is right up my street! I love the beautiful vibrant colours perfect for a light dinner in these summer months. Cool tip with parchment paper for the zucchini and eggplant. Looks delicious Jeff. You could definitely make this a pasta dish too.

I love the movie 🐀 and now I love this dish. Thank you for your tip it’s completely right all these fresh veggies contain so much water and baking them in the oven to extract the liquid is crucial. I met Frank Coppola and he is a very humble man and that’s when I starting drinking his wines but I never tried this one and you said notes of raspberries and plum I’m so getting this wine soon. Hi, Jeff! Wow, that vegan French ratatouille looks amazing! You are right: you need to roast the vegetables in the oven first so that it isn't mushy. Roasting also brings out the flavors. Crushed garlic is so flavorful! Glad to see that you added the heirloom tomatoes on the top. Like you said, they blistered nicely, so I am sure they were flavorful. So colorful and flavorful. Yes, it takes a lot for you to put down your wine, so I know that was good. The drizzle of olive oil at the end was the perfect finishing touch. Thanks for sharing!

Of all vegetables, eggplant is really one of the challenging vegetables to prepare coz many dislike it. I’m grateful that I found one channel who fried it so crunchy which I think u knew it jeff, but I always do it, it became like a snack to me lols. Anyways, I didn’t expect that u can do this eggplant here, it seems that, it’s the star of the recipe! Hahaha! By the way, the mashed eggplant is what we usually do in the Philippines. So I’m not surprised about it. This is really perfect if you’re dieting !

Hi Jeff! Making veggie stock today and catching up on your videos. I love ratatouille! This looks lovely. I like the idea of roasting the vegetables in the oven. That is what I did with my vegetable stock before adding to water on the stovetop. I love roasted vegetables!
