Smoking is another option (chipotles are just smoked and dried jalapenos and I use them for adding a lovely flavour to tacos, stirfry, or skillet potatoes), or pickling and canning! I love using home-grown pickled jalapenos for making cheesy jalapeno poppers.

The salt method is the way we do it back home in Mauritius island where I'm from, we don't cut it but use the smallest tiny peppers with garlic & salt with a little bit of vinegar let it pickle for about a week then strains it then pour olive on top and let it pickle again till it's ready to eat😋😋😋 with baguette and sardines salad🙏♥️🇺🇸🦅🇲🇺🦤

Tip: a french press works great for this. Use the plunger to keep the chilies submerged, and since it's perforated it remains open to atmosphere.

Thanks for the video! When preserving chilis in salt water, what do I do with the water that seeps out of the chilis after the first day of sitting in just the salt? Do I pour it out?

Yes! Keep it as dry as possible

How do you store the fermented peppers once its done fermenting?

It is recommended to store in fridge to slow down the fermentation process.
