How to preserve peppers by dehydrating or freezing. Here I show how I process a lot of peppers for future use. There are several ways you can preserve your pepper harvest, but freezing or drying/dehydrating are two of the quickest.
I also show the importance of using a vacuum sealer after drying and before freezing. This preserves the peppers indefinitely for future use.
Most people will use their peppers throughout the season making sauces, powders, cooking, etc... When you harvest a bunch at once, it's hard, if not impossible, to use them properly before they go bad. Properly preserving them gives you time to decide what to do with them later. It's also nice to have fresh peppers to season or cook with, or make jellies, etc... throughout the winter months.

Thanks Aaron. The first year I grew peppers I froze them in ziploc bags, and they all got either freezer burned or smelled like freezer. Had to toss them. I haven't had any problems since I started vac sealing them first.

Hey Peter, when they thaw are they more mushy than normal? I have done the zip lock route if im only trying to preserve for shorter periods of time and using in sauce etc. I have a food saver so will have to start putting it to use. Thanks for the video.

+Ripx510 They will be mushy after freezing and thawing. Has something to do with cell walls bursting during freezing process. Doesn't affect the flavor though.

The dehydrator I use operates at a preset temp of 165 F. That's probably too hot for the seeds, but I haven't done a germ test to know for sure. The next batch I run, I'll save a few and try to germ them, and let you know the results. I usually let my seeds air dry at room temp for about 3 weeks. That seems to work really well, but does take a while.

@@AEON. It depends on the operating temperature of the dehydrator. I've read varying opinions on the safest high temp, but most agree it's around 110ish degrees F. So you would need a dehydrator with an adjustable temp option. The one I have just runs wide open at 165, so I don't even try to save those seeds.

Peter, have you ever just taken the pods and froze them first before vac sealing? Or is it better to cut them first vac seal then freeze? Also can you dehydrate them in the oven?

If you freeze them first, might make it easier to remove them individually. Personally I like to cut them so I can inspect and make sure each pod looks good. If they're cleaned and checked before freezing, then I know they are ready to use out of the bag. I haven't tried dehydrating in the oven, but I have dried pods that were frozen, in my dehydrator and it worked fine. I've found that it's a good idea to let them thaw and drain for a while first to get rid of some of the excess moisture. It also works great to smoke them first, for the same reason (besides adding smoked flavor). Although I've never dehydrated peppers in an oven, I know of people who have with good results. Ventilation might be an issue, or might want to do when no one else is home.

Thanks. I've done both methods. Only thing with freezing the pods is that they are soft when thawed. We'll see how it goes

Great video:) I usually put my hot peppers in a zip lock bag and put them in the freezer. But when I’m ready to use the peppers they are soggy and very wet and tastes like freezer burn:( Does this happen to your peppers with the vacuum sealer?

Thanks for watching. Vac sealing will eliminate all the freezer burn and smell. The pods will turn mushy after thawing either way, but it won't matter if you're making sauce. You can also dehydrate frozen pods after thawing.

Powders, flakes, spice blends are great. You can use powders in hot sauce. You also rehydrate whole pods by adding water.

Seems like putting them in a bowl after a quick rinse an sprinkling baking Soda Over them and then hit them with the vinegar would be faster and more fun😁

I was wondering if you've made a video already (As I just sub'd and haven't had a chance to look yet) or know what is the best pepper to grow to make homemade paprika? Thank you for watching, and asking this question. Honestly, I haven't made it yet myself. I'm planning to try it this year using a paprika type, Piment d'Espelette. I believe any of the sweeter, mild annuum pepper types should be fine to use. I plan to just dry it thoroughly, probably remove seeds first, then grind it out in my mortar and pestle or use an electric blade grinder. I have a couple of other types that might be good to mix with it like Palmyra and maybe Criolla de Cocina. You could also smoke the peppers before dehydrating to get smoked paprika. Thanks for subscribing, I'll share the results I get with my own experiments.
