I had so many hot peppers growing in my organic garden this season, I decided to preserve them using a family recipe handed down from my parents. I would also like to acknowledge my lovely wife Grace who directed and filmed this segment.
Seems like you could shorten the process by cutting them fresh, then drying, and then going straight into the jars. instead of drying, reconstituting (boiling in water), and then drying again. Right? Another question, do you refrigerate the chili oils? Or does this just sit out on the counter at room temperature?
