SOFT VEG PARATHA WITH DAL
-2 small size cauliflower heads
-1 small size broccoli head
-1 finger size carrot
-1/2 small boiled potato
-Soak in salt water broccoli & cauliflower for 5 minutes, then rinse again in water a couple of times & drain ))
-Blanch broccoli, cauliflower & carrot till tender, let it cool
-Grate broccoli, cauliflower, carrot & potato
-Mash with potato masher till soft & smooth set aside
KNEAD DOUGH
-3 tbsp jowar flour
-3 tbsp bajra flour
-4 tbsp wheat
-1 tsp organic ghee
-Add into a mixing bowl mashed mixed vegetables, jawar, bajra & wheat flour, ghee knead to a soft , smooth dough
If the dough lookes dry add 1-2 tbsp warm water, if the dough looks too moist or wet dust little flour, mix and continue to knead
-Let it rest for 30 minutes
-After 30 minutes massage a bit, pinch small size ball flatten it slightly with your palms & dust it lightly with some flour
-Gently roll it out with a rolling pin, dust lightly with a flour as needed to keep the dough from sticking
-Now place it on a hot tawa/pan
-Keep the heat medium
-Cook the first side brush ghee, flip and cook the other side brush ghee, flip couple of times and cook till brown spots appear on both sides
-Let it rest for 5 minutes
-break into small pieces and in a bowl pour warm dal soak roti pieces once it’s soft serve
(TO MAKE DAL:soak 2 tbsp green moong dal, 1/2 cup toor dal, 1 glass water, pinch hing & turmeric and pressure cook till done, add 1/2 tsp ghee)
RAVA PUMPKIN &
CARROT PORRIDGE
-1/2 medium size carrot
-2 tbsps semolina/soji rava
-1 date & 2 almond soaked
-1 cup hot water
-1 tsp ghee
-Dry roast Raval for 2-3 minutes
Remove and set aside
-Boil carrot & pumpkin pieces until soft & tender, Transfer into a blender, along with almond & date, blend to a smooth puree set aside
-Boil 1 cup water set aside
-Heat small pot add boiled water, ghee, add roasted soji rava, keep stirring so that no lumps are formed, Add carrot & pumpkin
purée continue to stir reduce the flame let it simmer for 1-2 minutes cover and cook when porridge has thickens
-Remove from the flame, add more ghee
-Serve warm
SCRAMBLED EGG
-2 egg whites
-Whisk egg white
-In a bowl, add egg whites using a fork/whisk beat vigorously
-Take a non-stick pan rub butter inside it , warm the pan over medium heat, pour in the egg white, let it cook undisturbed gently stir with a spatula to form soft curds of scrambled eggs.
Remove from the heat
-Serve warm
