Thanks for the video. In Argentina and hot peppers are hard to come by. Brought some back with me on my last trip. Now I can save them longer.

Thank you, I got two hundred jalapeños for $3 at the market, after giving some away, I will use the method to preserve the others, I won't buy jalapeños in a while thanks to you😀

Rather than blanching, could I wash and roast them and then freeze them? Would roasting preserve the enzymes?

I have had luck growing both Jalopinos and habinaro peppers in Sask. Canada

Hi Dwayne, yes we have many customers in Canada....including Western Canada too and they manage to get a full crop. Jalapeno's and Habanero's are among the easiest and quickest to grow. PJ

I have a theory; If you do not rinse with cold water after scolding the peppers they will contain warmer/hotter fluids. This way they will freeze faster (higher temperature water freezes faster than cooler) and the texture will be better preserved rather than having 'mushy' peppers once you thaw them for use.

Blanching is not required prior to freezing with a pepper. I don't know of anything that is more freezer friendly than a pepper.

Should you immediately put them in the freezer bag when they are still wet and then immediately in the freezer, or let them air dry first before putting in the freezer bag?

Is blanching necessary? They are hot peppers! Just like they keep bugs away, I think the same goes for fungus and bacteria.

Mark, a quick blanche will kill fungus and bacteria that may be harmful. It will add to the shelf life as well. If it is a quick scalding water blanche, the peppers will remain crisp so there is no downside. Rinse with a very cold water blast afterwards. PJ

Common sense would tell you hot water does not freeze faster than cold water just to let you know Daniel Mahoney. when a vegetable is frozen fresh it doesn't take long and then whenever you pull it out a month or so later it will not be mushy because it wasn't sitting in liquid water it was frozen... Just sayn.

Hot water does freeze faster the molecules are moving faster someone didn't make it out of junior high, dont believe me try it with Ice cubes.

You will lose a small amount of heat compared to them being cut fresh off the plant but will still be hot.
