If I had to pick my top favorite Asian dishes I loved ❣️while growing up, this would definitely be on the list. I have so many great childhood memories 😃 associated with this soup and I often crave all the amazing elements of this meal; the bold flavor of this savory soup, the tender beef chunks, the long, chewy noodles... my mouth is actually watering right now!
There are restaurants around that literally serve JUST Beef Noodle Soup... it’s THAT good! However, as is the case with eating out, it’s hard to call this a healthy meal because it often contains too much oil and fat in the soup and of course the big bad MSG for flavor.
So, while it takes a number of steps to finally get to the eating part, I find it SO worth it to know 💯% in my bowl.

MSG is completely safe to eat. Just don't add too much and add less or no salt if you add MSG. MSG is just a delicious kind of sodium.

Thank you for your comment Gavin. MSG is one of those still controversial ingredients out there in regards to whether it is harmful to your health or not (such as soy, or dairy, or gluten) but my thinking is that if I can create great flavor without it, why not? Especially since it is only a flavor enhancer and doesn't provide any known nutritional benefits. I have actually been allergic to MSG my entire life. I get hives and bumps on my face which itch and burn as a reaction. My brother gets hives and bumps all over his body. One time when I was in college, I had "cheated" and ate some noodles off of a food stand and my tongue swelled up... it was actually quite scary. I've been very, very aware of the use of MSG in food and have needed to read labels since I was a kid. This allergy is actually the reason why I started experimenting with cooking to begin with many years ago. I had already experienced the "favor" of MSG and hated that I had to eat versions of food that I deemed way bland in comparison. MSG or it's other forms is often added to create flavor in canned soups, flavored potato chips and tortilla chips, cheese puffs, cracker or party mixes (like Chex Mix), dips, sauces, boullion or commercial stock, packaged rice mixes, instant or packaged ramen, baby food, dressings, spice mixtures and more. Trust me, I had so many "BUT MOMMMMMMM!!! I want it" moments but I rarely won that argument. I felt like I couldn't eat ANYTHING tasty! The widespread use of MSG in food in Asia happened as the population grew while people were super poor... like making a soup by literally flavoring hot water and very minimal ingredients, and it just continued to be used. Now, I know there are natural occurring glutemates found in certain foods but the chemically created MSG and their counterparts registers in your brain and nervous system as an toxin and it also affects your brain cells, over exciting them to the point till they die. I don't want to get overly scientific here but I just want to ask if you have ever felt when you are eating something containing MSG, that you may have an insatiable need to go back in for more even though you are clearly full? Also, the headache that happens a few hours later, and the brain fog? MSG for you and for many may be absolutely fine as the effects may not appear as strongly but I definitely am affected. I choose to listen to my body and create recipes that are deliciously made without MSG that I can eat and also share with everyone else.
