Just made this and it was exceptionally good. WE've just moved to Thailand, so I was able to get all fresh ingredients, including some vegetarian Thai chilli paste. I did use a teaspoon of coconut sugar in there as well, which really made an extraordinary difference in blending the sour notes with the chilli, making it very rounded and balanced. Absolutely beautiful recipe.
Just made it again, having found some vegan fish sauce, which took it to another level!! Also, used some of the Thai radish which really adds something special.

I first saw a real eggplant when I was in Lae, Papua New Guinea . Was late in the evening when I visited a friend in Lae and at first sight, I thought some kid. has stuck egg shells on a small pant. Next morning I got a shock when I realise why it was called an egg plant - perfectly egg shaped and white pods -- just like eggs.
i am in australia i eat chinese food most days with lots of garlic red chillies at least 10 garlics and other vegs. good luck not egg plants more than a wedk betwern meals

I always do. Some cooks and chefs say to just wipe them with a wet paper towel but I still find some mushrooms out of the box sandy or dirty. But, I only wash them and quickly right before I use them! Thank you for subscribing. Enjoy!

It IS a bit of work. I haven't seen the Costo one before and haven't looked at the ingredients. Of course, if you make it yourself, you know exactly what's going into your kim chi!
Looks delicious. The ingredients were ginger, garlic, soya sauce, chilli flakes, arrowroot. I did not understand what the other sauce was, something like adabe. What is it?

Yes, this would work well with asparagus too but just watch the cooking time on the asparagus... you don't want to over cook them! I'm glad your family enjoyed this recipe! Cheers to healthy eats!
