My mouth always waters when I think about this incredible soup! I have so many childhood memories attached to this bowl of magnificence and it's way up there on my list of my favorite dishes ever! I would say this soup should be as popular as the Vietnamese Pho soup but it just doesn't seem to be offered as much in areas that are not predominantly Asian. So, if you love a bold broth with lots of goodies in it, I HIGHLY recommend you make this for your family. You won't be sorry!
I always recommend using organic ingredients as much as possible but sometimes they are hard to find or just not available. Beef shank (the cut of beef I use to make this soup) is not generally found in regular grocery stores. They usually have this cut in Asian grocery stores but it's hard to find your beef there to be organic and grass fed.
You may have to ask your butcher to special order it for you and it could be a little pricey but it's totally worth it! If you want to use another cut of beef, you totally can but you won't likely get the chewiness from the beef from the shank but you can still enjoy the tender cubes of beef.
While there are number of steps to making this soup and it definitely takes a number of hours to cook the beef until tender (unless you are using a pressure cooker like an Instant Pot) but the result is unforgettable. Watch and learn!
