Ingredients:
300 g silken tofu
3 tbsp ketchup
1 tbsp soy sauce
2 tbsp olive oil
3 garlic cloves
1 tsp stock powder
1 tsp chili powder
3 tsp paprika
1 tsp ground black pepper
1 tsp ground cumin
3 tbsp nutritional yeast
220 g vital wheat gluten

I tried this recipe today, and let me just say I won't be buying store bought sausages again. Instead of using silken tofu I used firm, and I also increased the spices a little like red pepper flakes, and chopped garlic, fennel and sage. I absolutely loved this recipe. Ya'll need to try this and don't be afraid to tweak it if you feel the need to Thank you Home cooking Therapy

I’m going to make these and try them as meatballs as well. You say they freeze well so I’m going to attempt to make a few batches and vacuum seal some for the winter months. I’m really liking your videos.

Thank you for an easy vegan sausage ( or burger or meatball or meatloaf ) recipe that does not include mushrooms. I can’t stand them. A lot less experimentation on my part.

This looks great! I'm glad I came across your channel. One question: do these freeze well? I am the only vegan in my family and want to start making my own recipes, however I find not too much freezes well without those weird ingredients...(love that term, by the way) Thanks for any input!!!

Yes they freeze well, but to be sure they are good you can defrost them in a pan with just a little bit of water. The water will evaporate and they will not be dry, from that point you can add a little bit of oil and fry them after your own preference. 😊😉

I have been eating Plant-based since 2017. I've always wanted to make my own and hoped to come across an easy Plant-based recipe for sausages and or meatballs to add various to pasta dishes. With a BIG THANKS to you, I now have that recipe!

I actually tried this. I didn't know how much tofu =300 grams, guessed, used extra firm, so it turned out a little dry, so I added some water, not much, then it was too crumbly so I added some flour. I didn't want to boil, then turn, so I put in insta pot and pressure steamed. They turned out pretty good. Next time I'll use silken tofu and about 12 oz., but the pressure steamer worked great.

One ounce is about 30 grams, so 300 is about 10 ounces. (Actually, 28.5 grams but 30 is easier to multiply by).

These look great,except i cant have gluten.what can be substituted for the wheat gluten ?? as i have a strong alleegy to gluten.

They look delicious, but I think would be enhanced if they were browned in oil to give them a real meaty sausage look. assuming they do not fall apart - they look solid enough for that. I will try your recipe - thank you !

Can you oven bake these please? If yes, how long and at what oven temperature please?

I didn’t try baking them but I think you can. Usually seitan is baked wrapped(for a chewier texture), at 350°F (175°C) for 45-60 minutes. Remove the wrapping in the last 10 minutes of baking to allow the top to brown slightly.

Hi! This recipe is based on gluten. If you try to replace gluten, you will have a completely different recipe, a different texture. To get the same result, gluten must be used!

That is the reason I use parchment paper, to avoid direct contact of the food with aluminum foil.

Wheat gluten is the base in this recipe, but besides the traditional recipes, the charm of cooking is trying different combinations until you get the recipe that is good for you

Hi! If you want to replace tofu with something else (beans, chickpeas), the consistency of the final product will not be the same.

I was wondering the same thing, my granddaughter is allergic to many foods and tofu is one of them, and was wondering if maybe I could replace the tofu with rice?

Thank you so much for responding to my question and for replying so quickly. Because of my granddaughter’s allergies (which she developed after taking calpol medicine) tofu, soya sauce, cumin and wheat gluten will have to be omitted (what is the purpose of wheat gluten-is it for bulking? - I wonder if I can find an alternative that she can tolerate). Her allergies are so severe, she’s only six and has a very limited diet but I will certainly take on board what you said about blending rice with water😘 (maybe adding mushrooms and other veg that she can tolerate) and seeing what happens- thanks again🙏🏾🤗

honestly, I just love this recipe but I have to admit, I am seriously worried about the aluminium foil which I have come to learn is very dangerous and toxic to our bodies when heated. I know you use the parchment paper to lesson the impact of the aluminium but it is heated and in liquid [which in this case is boiling water] and that soaks through each encases sausage, through the parchment paper and reaches the delicious mixture anyhow and therefore the food is contaminated with aluminium poisoning...I'm just being very, very open about how I feel...I really, want to try this but this is my biggest fear. If you can share facts about how this will not be toxic to my body I will most definitely try it. Please do not take offence my friend, it is not meant in any negative way...your recipe looks simply Amazing, its just the above issue I need peace of mind on. Thank you so much 😊

Hi there. Maybe try baking them low. If it appears they get dry maybe rinse with water. I myself was concerned about aluminum. I’m going to try that method. If you do before me let me know if it helps or if you find a different alternative. 🌱
