These homemade vegan sausages using the leftover okara and vegetarian sausage casings are delicious! Once I get myself a proper sausage filling nozzle, I will be making these sausages often.
Homemade Vegan Sausages with Vegetarian Casings (with leftover okara)
1 1/2 cup fresh okara (or use 1 1/2 cup mashed beans)
3/4 cup sunflower seeds, milled into flour
1/3 cup brown rice flour
2 tsp coconut or rapadura sugar
2 Tbsp mushroom powder (shiitake or porcini is best)
2 Tbsp soy sauce
1 Tbsp onion powder
1 Tbsp caraway seeds
1 Tbsp tomato puree
1 to 2 tsp beetroot juice powder (optional)
1 tsp garlic powder
1 tsp smoked paprika
1 tsp liquid smoke
1/2 tsp salt
1/4 tsp ground nutmeg
Add 2-4 Tbsp vegetable stock or olive brine if needed to get to the right consistency (soft dough, but not too stiff or too runny).
Bake at 160 degrees Celcius for 30 minutes.

They look tasty. I wonder as you’re baking them if you really need the skins? Maybe they could just be rolled into sausage shapes and baked like that with no skins or rolled into meat balls

Yes, that would probably work too, in that case, no need to add any extra liquid. You are reading my mind - I will be making vegan meat balls with this mixture next, I will add a bit of psyllium husk to make them even firmer 🙂

Will the casing stand to being steamed for a couple of hours or will it melt?

I am not sure actually, as I haven't tried, but it seems sturdy enough - worth experimenting with 🙂

Ms. Inga, I'll give this a go with lentils, or other beans/legumes perhaps. I'll cook my lentils then put them on a baking tray in a 325F/163C oven for 15 minutes. A trick I picked up to keep black bean burgers from being mushy. I swiped it from someone else's recipe. I've used the same trick when making lentil burgers and lentil and chickpea burgers. I never thought about putting the legumes through the food processor. I always used my potato masher. I'll have to give it a try buzzing them up in the food processor.

With these casings what if I were to grill or dry pan fry to dry the inside and crisp the outside?

You can always use mashed whole beans.

The link for the casings is forwarding us to Collagen casings, they are not vegan at all and probably made with beef or pork proteins.

I have just checked, and collagen sausage casings are made from beef, so definitely not vegan, I must have accidentally linked to the wrong Tongmaster product, as I have definitely used vegetarian version of these, I have put the correct link now 🙂
