Displacement maps are unique in that they actually displace the geometry to which they are applied, whereas Bump and Normal maps only affect the normals existing polygons. That's why displacement maps are indispensable when it comes to making realistic surfaces such as landscapes, cobblestones, or as demonstrated in the video, bricks.
