We have a new (to the channel) pasta shape this week: have you heard of 'fusi istriani? It's a pasta shape made in the Italian speaking region of Croatia called Istria - which also includes Slovenia and a little bit of Italy. Fusi are like smooth garganelli but made a different way. And Pasta Grannies ventured over the border (well, two of them) to find out more about it with Elena, Lorena and their friends.
Their beef stew is:
1kg stewing beef, cubed
1 large onion, chopped
salt, black pepper, a bunch of herbs including: rosemary, marjoram, bay leaves, sage, parsley
1 glass white wine
400ml tomato passata
some water (add as needed to stop the sauce getting too thick, too quickly)
Their pasta: 500g 00 flour, 2 eggs, 1 teaspoon of salt dissolved in 130ml water.

My father's family is from this region of Croatia and my grandma and aunts made this many times on Sunday's and holidays. I remember helping to make the noodles. I remember that we used wood pencils to roll out the noodles. The brown sauce is also the key to this dish. It's a meat sauce normally from beef or even wild boar meat. Similar to the sauce used with Istrian style Gnocci. It's so good and a very hearty meal. One of my favorite dishes along with Istrian prosciutto, cheese, and wine.

O wow! That sounds delicious!! My great grandparents came from Italy when my grandfather was a young boy, I'm not sure where exactly. I know that my grandpa changed his Italian last name to something that was a little easier to pronounce. I would love to one day visit Italy! It a beautiful country and I enjoy watching pasta grannies every Friday!!!!

My father emigrated from Istria to Canada over 50 years ago. I can remember my Teta’s sitting around a table together making fuši for special occasions. Even as a young child I appreciated how much work each and every piece was. Thank you for making and sharing this video!

A few years ago I travelled in Istria, and one of my most magic moments has been eating fuži s tartufima (truffle sauce), it is one of the best thing I have ever eaten in my life. Viva l'Istria !

They are not Italian. They are Croatian, just not Slavic. The Italian language was forced upon them during the Mussolini days when this part of Croatia was part of the Italian Kingdom, but they are not Italian.

@@flintsky7706 They are from the coastal side of Istria and their language is the dialect istro-veneto, very symilar to that of Venice itself and the land belonged to the Repubblica di San Marco until it's dimise by Bonaparte in 1797. After 1815 Istria belonged to Austria, and they still spoke their dialect and even after 1918 they reteined this italian based dialect. I am from the Interior, from Pisino, Mitterburg, today Pazin, small town always belonged to austrian seigneurs (though from centuries to the Patriarcs): they spoke italian and croat, indifferently and even had two copies of each institution: italian and croat two gymnasiums and lycaeums (for a small town of 5.000 souls), one in italian and the other in croat. After 1918, the italians imposed the language and cancelled all of the croat institutions. This was in the interior. Along the coast they were always italian speakers. They are Istrians, like me, mixed as was normal in the days of the Empire: italian, austrian, croats, slovenian, almost all multilangual and the dialect as common language.

Just what you need at harvest & shearing time. Huge plates of tasty food that's quick to eat, fills you up & gives you lots of energy. Miss those harvest meals when we all got together to get the work done. [Don't miss shearing sheep though, not my favourite animals. 😄] Great kitchen again, loving the stove. When we needed a lot of heat very quickly we'd burn seasoned rhododendron logs, burn so well, are the right thickness & don't create much ash. [We used to clear swathes of it when working in the forestry]. Loved the wee diversion to Croatia, nice to change things up occasionally, and those ladies are a real team when it comes to putting out vats of good food. Thank you.

@@aina8318 Haha, if you've every worked with them it's quite easy not to be overly fond of them. Dumb, skittish & do their best to get stuck places or just keel over dead. Now goats I like, the ungulate version of a Jack Russell... feisty, huge personalities, self sufficient & hardy as well as being very funny.

It would be interesting if you'd go to the northern part od the country like Zagorje and see how they make local pasta mlinci (big baked thin sheets of pasta which is best served with roasted turkey) I love what you're doing but it would be interesting to see you explore more traditions and cultures around the Europe/Mediteran :) ps thanks for soo many great recepies

you should check out fleischnacka - my grandmother and great grandmother made this Alsacienne - Alsace, France, dish differently - like a ravioli with thicker noodle dough that we add Sylvaner or another Alsatian wine - filled with beef mixture(fried) and pot eau feu (beef broth) put in afterward until the dough soaks up the broth. (leaving a bit of broth to top with). The Alsatian recipe that is online and used is made with the dough rolling around meat mixed with egg/onion/parsley/etc. (my mother used to grind the beef by hand) make into a roll - then sliced and fried and broth added.

Istria is Croatian speaking (87,2%) region of Croatia. As there is Italian minority, it is also Italian speaking.

It is Italian-speaking because the region is a portion of the Italian peninsula and falls on the souther side of the Alps so totally contained in Italy. You are aliens in our region and we stay ready to beat you off at first possibile war

hi Vivvy, thank you for feedback. We've been looking at subtitles and have added a shadow to help with legibility. It's a bit of a trial and error thing, as if they are too clear they obscure the pasta making action, and closed captions didn't work (loads of people didn't know to turn them on). it's called gulaš, my mom is from these area. although it has the similar name as Ungarian Gulyás, (Goulash = steamed beef) it's different, istrian has no paprika in it

Istria and Dalmatia (both parts of the actual Croatia) belonged to Italy for eves, until the end of the 2nd world war.

The territory of Istria and Dalmatia through history was part of different kingdoms and empires, like for example it was part of Kingdom of Croatia, Venice, Croatia that was in personal union with Hungary and so on... Modern Italian nation was invented in 19th century like all other nations where invented so it canont be that Istria belonged to Italy in 14th century or 17th ....

@@carloal3498 If you look at comment you will see that there was no question, he was just surprised that there is Italian speaking regions in Croatia... And the reason is because in Croatia, in some part of Istria there is Italian minority and much more Italians where living in Istria (and Dalmatia) since 19th century and they left cultural and social heritage... But before 19th century Italian nation (and all other nations) didnt exist and so you canot say that Istria and Dalmatia belonged to Italy before 19th century... You can say that before 19th century Istria was part of diffrent emipires and kingdoms, like for example it was part of Venice, which is part of today modern Italy but Venice in medival time and new age time was empire and they spoke Latin not Italian (because Italian nation and Italian language didnt exist)... But Istria and Dalmatia where part of Kindom of Croatia which was not nation but it was the same ethnic group like they are today the same nation...

Well it's not really an italian speaking region of Croatia, Istria was part of Kingdom of Italy till 1945, then most of the italian speaking people of the region migrated when Istria became part of Jugoslavia. Nowadays there are very few italian speaking people in Istria and Slovenia, about 7%.
