We have a new (to the channel) pasta shape this week: have you heard of 'fusi istriani? It's a pasta shape made in the Italian speaking region of Croatia called Istria - which also includes Slovenia and a little bit of Italy. Fusi are like smooth garganelli but made a different way. And Pasta Grannies ventured over the border (well, two of them) to find out more about it with Elena, Lorena and their friends.
Their beef stew is:
1kg stewing beef, cubed
1 large onion, chopped
salt, black pepper, a bunch of herbs including: rosemary, marjoram, bay leaves, sage, parsley
1 glass white wine
400ml tomato passata
some water (add as needed to stop the sauce getting too thick, too quickly)
Their pasta: 500g 00 flour, 2 eggs, 1 teaspoon of salt dissolved in 130ml water.
