The creamiest, restaurant style butter chicken recipe at home with homemade roti chapati and coconut rice.
RECIPE
For Chicken Marinade:
2 cloves garlic
1tsp minced ginger
1 lemon juice
6 skinless & boneless chicken thighs (cubed)
1tsp sea salt
1tsp chilli powder (use only half if you want it less spicy)
1tsp ground cumin
1tsp ground coriander powder
1tsp garam masala
1tsp turmeric
3tbsp thick Greek yogurt
For Gravy:
Four Ripe Tomatoes
1 medium red onion (optional)
3 cloves garlic
15g Fresh ginger
3 whole cloves
4 green cardamom
80g plain cashew nuts
2 red birds eye chilli’s (leave out if you want it less spicy)
1tbsp tomato paste (optional)
1tsp chilli powder
1tsp cinnamon powder
1tsp ground cumin
1tsp ground coriander
1tsp garam masala (1extra spoon to add at the end)
1tbsp brown sugar
1tbsp fenugreek
150g water
50g unsalted butter
50g double cream
Salt to taste
For garlic Roti:
300g strong flour
180g warm water
5g sea salt
20g light olive oil
For coconut rice:
2 cups basmati rice
3 1/2 cups of rice
5g Salt (you can add more if you like)
25g butter
30 - 50g desiccated coconut
