Karantika (Algerian chickpea pie) aka Garantita is a very popular snack in the streets of Algeria. Normally eaten in baguette with harissa.
RECIPE
For Garantita:
500g cold water
250g chick pea flour (gram flour)
250g whole milk
2 whole eggs
1tsp freshly ground cumin
1tsp smoked paprika
1tsp onion powder
10g salt
For Harissa (medium heat)
1 whole red bell pepper
1 red onion
3 cloves garlic
6 red Birds Eye chilli
1/2 cup fresh coriander
1tsp cumin seeds
1tsp fennel seed
1tsp caraway seed
1tsp coriander seed
50ml extra virgin olive oil
1tbsp tomato paste
For Baguette:
(Day one / polish)
100g strong white flour
50g whole meal flour
3.5g instant dry yeast
350g cold water
(Day two / bread dough)
3.5g instant dry yeast
5g sugar
10g sea salt
400g strong while flour
