EASY chocolate curls tutorial. Beautiful topping for cakes and pies!
Ahhh, chocolate curls…so beautiful and yet so likely to make you want to scream in frustration…at least until you’ve learned the RIGHT way to make them. Do your chocolate curls crumble? Turn into mush? Fail to set? I’ve been there! But after much practice and learning, now I can spare you any further agony and give you tips to making perfect chocolate curls that you can count on. Your friends will be amazed by your endless talents!
These chocolate curls are a perfect way to dress up any dessert. Use them on cakes, pies, tiramisu, ice cream, you name it.

CHOCOLATE CURLS **RECIPE**
INGREDIENTS:
1 Tbsp. vegetable shortening
1 cup chocolate chips
GETTING READY: ¬¬¬
1. Set out a clean baking sheet, off-set spatula, microwaveable bowl or cup, and a pastry scraper or flexible sharp-edged spatula for making curls.
2. Make space in your fridge for the baking sheet
3. Prepare a plate or baking pan with waxed paper for completed curls
DIRECTIONS:
1. Separate out about ¼ cup or a little less of the chips and set aside for later
2. In a microwaveable cup or bowl, add shortening to the ¾ cup of chips.
**The goal for the chocolate chips is to melt them about 75%-80% of the way at 50% power. Then, quickly cool down the chocolate with the remaining chips to bring them back to a tempered state. Do not melt entirely in microwave at full power. Yes, it’s easier and quicker, but you won’t get the end result that you want. Been there…done that.
3. Microwave the chips/shortening mix for 30 seconds at 50% power. Stir.
**Chips will not be ready yet but it’s important to go slowly. Patience is key here.
4. Microwave again for 30 seconds at 50% power. Stir. Observe how much of the chocolate is melted. Remember, you want to have remaining chunks of chips that have not melted yet. Resist the temptation to melt them all the way.
5. At this point, depending on your microwave, you may need to put your chips in for another 30 seconds at 50% power, or start going at 10-15 second increments at 50% power. Stir.
6. Continue these steps at 10-15 second increments until chocolate is melty with chunks of chips remaining.
7. Once chocolate is about 75%-80% melted with chunks of chips remaining, add in remaining chips and stir. Allow new chips to melt as you stir. These chips act to cool the chocolate, bringing it back to a tempered state. You may need to let the chocolate sit for a minute to allow the new chips to soften. Stir until smooth, with no chunks remaining.
8. Place baking sheet in fridge for about one minute. Much longer than this will cause your chocolate to set up too quickly.
9. Place your sheet upside down and pour melted chocolate onto pan. Spread with off-set spatula back and forth, covering the entire surface.
10. As you spread, your chocolate will begin to set. You will notice this as the chocolate will start to lose its shine and become more matte.
11. Test chocolate by lightly pressing a finger to it. It should leave a light fingerprint, but not an indentation.
12. Test a corner of the chocolate with your scraping tool: Hold pan, angle tool at about 45 degrees, and push away from you. If chocolate mushes up without curling, wait a few more minutes for it to set more. Test again. Repeat until the chocolate curls. (If chocolate crumbles, the chocolate has set too much and must be re-softened.)
13. Gently move curls to waxed paper with your scraping tool and set in fridge. They will set nicely and be able to be handled to decorate your dessert.
Tip: I like to make my chocolate curls a day in advance of making my dessert. I put them in a shallow/wide storage container to protect from being crushed by my kids going in and out of the fridge

I've never tried the chocolate curls with the candy melts, but I know that it's a popular method. You can also check out my other chocolate curls video (stove-top method) where I share a favorite trouble-shooting tip. When I first tried making chocolate curls, it took me some practice to get the hang of it, but I promise it gets easier as you get familiar with how the chocolate behaves. Have fun with it!

OK Great. I did remelt it (twice) and finally got some good curls but I just can't seem to get it right the first time. Once the chocolate was at the 'right' temperature, it worked great but my problem is that I can't tell when that is. :D I love using them and everyone seems impressed when you use the curls on the desserts!

Thanks for the nice comment! I like to make my curls ahead of time, so that they are ready to use when I need them. I've saved my chocolate curls for about 4 months in the refrigerator without any problem at all. They could probably be stored much longer but I always find plenty of excuses to use them...and with 2 boys and a husband, they seem to disappear :) The key would be storing them in an air tight container so that they won't collect moisture or odors. Have fun with them!

Hello! They were semi-sweet Nestle chips I think, because that's what I usually have on hand. However, the chips that are a little flatter and wider would probably work even better. I believe the Ghirardelli chips are shaped that way. Hope this helps!

I use 1 cup chocolate chips + 1 Tbsp. vegetable shortening. Doubling both works fine too. Thanks for the question.

I tried them yesterday but didn't do well.....will try again. But I was using dark chocolate and probably didn't use the right amount of shortening.

Oh no! That's so frustrating. One thing to watch carefully is the temperature of your chocolate. If it's too hard it will break or crumble...too soft and it won't form a curl. There's a small window of time in-between too hard and too soft that is just right for curls. With a little practice this will come easier :) I hope your next batch is a success!

Hi! I did a separate video using high quality chocolate while melting over the stove...you may want to watch that video as well, because in it I talk about my favorite trouble-shooting technique too. I do use the vegetable shortening for both situations, but I think you could do without it when you use the better chocolate. In my opinion though, it just seems to make the curls form more easily. Follow all directions carefully and remember not to melt down the chocolate fully before you seed with the remaining chocolate. Hope they turn out great!!

Yes, I've had success remelting and trying again. One or two remelts seem to work fine, but I doubt you could do this multiple times and still get a good result. I have another chocolate curls video that you might want to watch...in it I offer my favorite trouble-shooting technique. Hope your next batch is fantastic!

The only thing added to the chocolate is good old Crisco Vegetable Shortening. Super simple :) Good luck with your curls, and thanks for commenting!

Hi Samara. thanks for watching and commenting! Yes, adding vegetable shortening to the chocolate does make forming the curls easier. It creates a more manageable consistency. I've done curls without shortening before, and while it can be done, I always choose to add shortening...makes life easier. :)

I followed your video tutorial to a "T" and all I got was a sticky mess! The chocolate was too soft to form the curls as I used the pastry spatula at the 45 degree angle. You are not specific enough as to how long to wait for the chocolate to harden on the tray before trying to scrape. I tried the fingerprint test and I came away with dripping chocolate. I put the whole tray in the refrigerator for a few moments and that did not help at all. I am reluctant to try this again as I don't want to waste the chocolate chips. Help!

Hi Anita. That doesn't sound good! By your description it sounds like it definitely needed more time to set. The reason that I can't really give a specific time to wait for the chocolate to set is because it depends on a few things: the thickness of your chocolate, the temperature in your fridge, and even the temperature of your kitchen at that time. If you decide to try it again, leave it to set longer either on the counter, or in the fridge for just a little more time. I hope the next batch is a success!

If I don't know what I did wrong I will end up making the same mistakes. Are we talking 15 minutes or 20 minutes to let the chocolate set? When I kept smoothing it on the back of the cold baking sheet, it never lost the shiny look and did not harden. I really want to make this work. I get a lot of grief at the Kroger store when I ask to buy their chocolate curls. It's difficult to even try to buy online.

Strange that it never started to firm up. If I were you, I would try a thinner layer next time. A thinner layer will set faster as it cools, as you smooth it back and forth. 10 minutes as a rough estimate to have it set, but even faster if the cookie sheet is cold and the layer is thin. Longer if the room is warm. Keep trying...you'll get it!

I know that some people use coconut oil (in the same quantity) instead, although I've never tried it myself. Shortening has worked so well that I stick with it. Have fun with your curls :)

+Anneliz Dinica Hi Anneliz. Definitely! The traditional method is to melt the chocolate over a double boiler, then remove from heat and add in the remaining chocolate. All other directions remain the same. Be careful though...even a drop of water in your chocolate will ruin it, so when you lift off your bowl, you may want to wipe the bottom of it to get rid of any condensation. Have fun :)

You actually can eliminate it if you want to, but it does help the chocolate curls form a little easier. I have never tried a replacement for it. In my experience, the most important part of the process (other than making sure you have tempered the chocolate), is catching the chocolate at just the right firmness. Too firm and they will crumble...too soft and they won't form. This comes with a little practice. :) Have fun with it!

Hi Sangetha - This is why re-tempering the chocolate is important...among other things, tempering will allow the chocolate to harden properly, and it will hold up under normal conditions. Although I use chocolate chips in this video, the easiest/best type of chocolate to use for curls would be a high quality chocolate with a high percentage of cocoa butter. Best of luck with your curls!
