Ingredients
225g (8oz) gluten free flour or mix (I used Sainsbury's gluten free flour on this particular occasion and you can see for yourself what great results I had!)
50g (2oz) butter, cubed
25g (1oz) of caster sugar - double up on this quantity is you are not adding fruit
75g (3oz) *sultanas or cherries
1 large beaten egg - add milk to make up to 150ml (¼pt)
1 level teaspoon of gluten free baking powder
1 level teaspoon of *xanthan gum
Beaten egg to brush over the scones before they go in the oven - optional, but does make the scones look delicoulsy glossy and golden once baked!
* Ensure this product has no gluten containing ingredients or 'may contain' warnings.
Bake in preheated oven 220C/425F/Gas 7/Fan 200C for approximately 15 minutes until golden brown.
