I never thought about making ground beef jerky! What a good idea and economical and probably a lot easier to chew than some other jerky

Meats meat, ground beef works well. At least 80% lean.

It's odd, but I only like ground beef cooked in the air fryer in the form of a half pound burger. I make 2 at a time. When I crumble ground beef and fry it in a pan with salt or make ground beef strips with salt from a jerky gun and dehydrate it, I just don't like the taste at all. So instead, I purchase thinly sliced bottom round roast, cut it into strips, salt it with Redmond's smoked salt, and dehydrate it at 160 degrees for 3 hours. Absolutely perfect texture and delicious.

I bought the salt! Thanks for this. Valentine's Day is coming up and my husband just started the carnivore diet today. That means I can't give him candy or chocolate, so instead I bought a heart-shaped tin and I'm going to fill it with different types of jerky that are carnivore diet friendly. I'm planning to use the ground meat recipe to make heart-shaped jerky! He is very concerned about additives and so really only wants to do salt and meat. But we've already tried to make beef jerky with just salt and it's just not... The stuff. I'm hoping that since this salt is only smoked and doesn't have additives of flavor from plants that it will work and kick up the beef jerky game a notch. 🙏🏻

I have the same dehydrator. I love it. I've been slicing up chuck roast nice and thin using a Beswood 250. So friggin good!! I'm for sure going to try the ground beef jerky!

Thanks! I’m getting into backpacking now that my health is finally improving and am looking for more homemade carnivore snacks/meals to take out on the trails. I don’t have an electric slicer but I do have a mandolin slicer. Not sure if that’ll work tho. Meat grinder & slicer are on my “save up for” list!

So how would you handle a weeklong backpacking trip? Would you eat beef jerky the whole time?
@AllThingsConsidered333
@AllThingsConsidered333 5 месяцев назад
@@Candyapplebone no I would make dehydrated meats that could be rehydrated with hot water just like people do with dehydrated veggies. It’s not difficult.

I am getting a dehydrator now, so that I can make lots of this stuff. I don’t have that handy meat slicer, so I won’t be freezing the meat in blocks like how you did. But that looks extremely convenient.

Subscribed, liked. Hello MU, yes, very interesting. I have a dehydrator. Am experimenting with thin sliced sirloin from Costco. But, sirloin is expensive. I like your technique of slicing frozen hamburger with your Chef's Choice serrated slicer. Thinking now about getting one. If you will, what is the longevity of the serrated blade over time of slicing the hard frozen ground meat? thank you, rocket

Greetings! Can't wait to try this. What ground beef do you use? 80/20? 90/10?
@MotionUnlimited1

@md07sot I use 80/20 but you can use 90/10 if you like.

I tried this a couple weeks ago. I used 1 lb 90/10 grass fed hamburger (got it on sale at Aldi). Did not like the texture at all. Recommend that if you are trying this for the first time to start out with about a pound of meat, maybe even less. It does make a lot.

Love it , I do have a dehydrator but not a machine to cut it, how else can it be cut ?
@LionessHiker
@LionessHiker 3 месяца назад
You can roll it out on a cookie sheet lined with parchment paper. Place parchment paper on top and roll with a rolling pin. It will be about 1/4” thick. Then place your rack upside down on top the rolled out meat. Flip it over and remove the cookie sheet and paper. Salt it. Place in your dehydrator.

You could use a jerky gun as well. They look like a caulking gun and usually come with different attachments that you can use for things such as beef sticks or sausage. They are relatively inexpensive as well.

just started making this, storage is a bit worrying for me . I have been vacuum sealing bags of portion size??? How long to keep??? not that they last very long anyway but I want to get a good supply stored.
@MotionUnlimited1
@MotionUnlimited1 7 месяцев назад
I just keep them in zip lock bags. I have them in bags for over a month. I put those moisture absorbing packs in the bag and haven’t had any issues. I don’t know how long it would last but I estimate it could last up to a year. Mine never last any longer than a month because they get eaten 😆

I’ve tested it at 6 and 8 hours and it can be done at those times too. I’ll leave for the full 9 or 10 hours because I like it crispy 🤤😁

Could you make pemmican with ground beef?
@MotionUnlimited1
@MotionUnlimited1 5 месяцев назад
Yes but I would use a lower fat ground beef like 90/10. The ground beef when dried doesn’t “powder” as well as a lean cut of beef like eye of round but I’ve made pemmican from ground beef many times.
@LionessHiker
@LionessHiker 3 месяца назад
I used 73/27 %. Gads what a mess! I guess I missed that in the video! I won’t forget that again! I blotted it with paper towels. The leaner would have been so much easier. 😢

My comment is more of a question. Is it better to use a meat slicer for ground beef frozen, or to make the jerky using a ground beef jerky gun? Can anybody comment on this please? I’m brand new to trying this.
