HI MARY, watching all of your videos 😊 thank you. Wanted to point out because of a few videos where you were not aware of removing fluoride from the water in some recipes, like water kefir. Fluoride is extremely toxic and is attributed to reduced IQ and many other things and shouldn't be ingested at all, even toothpaste. Dasani, and other brands of bottled water don't have it, but you have to search hard to find a filter to remove it, Zero Water does and reverse osmosis. Boiling water doesn't get rid of it.

I watched all the old cooking shows as well and loved them! When my father retired, he started to watch some of them as well. His favorite, being from the South himself, was Justin Wilson. I can still hear Justin Wilson saying “I guarantee “! Brings back happy memories from many years ago!
I always loved Julia Child as well. My favorite segment was when she lined up all the chickens - from the fryer to the Capon and said what they were all for! Great video Mary!

You mentioned so many of my family's favorite PBS cooking shows. Yan Can Cook, Julia Child, The Galloping Gourmet and our very favorite, Justin Wison. I still remember that rather unique way he pronounced "onion". Something like "uhn-YOHN"

Nothing better than homemade pancakes fried in bacon grease. Or even French toast when you are light on eggs, bacon fat fried bread is so yummy. Our family always took it camping. We stored it in a glass peanut butter jar. Or even in an old shortening can. No guilt about tossing it later if it was starting to get old. Good idea about seasoning cast iron with bacon fat
Those look delicious! I’m not an egg yolk fan so I would probably whisk my eggs up before I put them in the cups. Potatoes at breakfast are my favorite!
Oh my, looks SO delicious! My Mom and Grandma, now me, tried to use a variety of "colors" when cooking. ie, red pepper, onion, spinach, etc makes it pretty AND tasty. ❤

I'll try your foil method as well. I place mine on a cooling rack placed into the baking tray and collect the fat on the bottom. Love your work.
You might want these for dinner. I use to feel tired after eating eggs then found out why, they are high in tryptophan, discovered in my weight loss journey all the reasons why eating on time certain foods can cause a huge difference. I eat sweets at lunchtime now haven't gained any from eating it anymore either and no longer feel deprived 😊

I loved all those PBS cooking shows. The most helpful one currently airing on PBS is Americas Test Kitchen : Cooks Country. They work out recipes and highlight where pitfalls can happen. Very useful for the novice cook. I will love using this recipe for my next brunch gathering. Much more exciting than the typical bite-sized quiche ❤
I add bacon grease when I bake biscuits. I flip each biscuit in melted bacon grease. It gives such a nice crispy flavorful texture. I fry apples in it and then add brown sugar and cinnamon to it too. My grandmother made a German salad dressing and poured it over red tipped lettuce, called wilted lettuce. You serve it over your lettuce right off the burner. You take eggs beaten up and heat in a pan, with melted bacon grease and add a tablespoon of vinegar to the egg mixture and slowly cook on the stove till the eggs thicken in to a gravy consistency. Must continue to stir till desired thickness. Add salt and pepper. Then pour over lettuce with crumbled bacon bits, and diced green onions. It will wilt the lettuce and stir altogether. Serve immediately. It’s such a nice salad with such great flavor! ❤love cooking with bacon grease. And of course I’ve used it to fry my potatoes too! 😊
Galloping Gourmet! My Mom bought me a tape recorder to make sure I wrote all of the ingredients. I was in 5th, 6th & 7th grade. I'd make dinner every night for the family but with flambe, I needed to wait for my Mom to get home from work before I lit it on fire. Julia Child was another favorite. Nobody liked my older sister who was 5 years older cooking, so I'd cook & she'd clean! I loved that trade off.

Mary, you'd laugh if you only knew how many times I've rewatched (listened to) the same cooking class while preparing one of the many dishes you've inspired. Your channel really reminds me of the cooking part of the Victory Garden on PBS (maybe 30 years ago?). The lady on that segment always did really seasonal dishes using fresh vegetables and "real" ingredients. My favorite cooking program on PBS was The Frugal Gourmet with Jeff Smith, I think his show was on in the 80's. (I don't agree with the events that led to the end of his career, but I can separate his cooking show from his personal behavior.)
I've made these, and they are good, it's about time I should make them again....kinda forgot about them....thanks for the reminder Mary....I've used pork sausage also, I like it better than bacon....and I like a little heat in mine too besides black pepper....but I like putting the cheese on last......and I like them over easy too, you could even scramble eggs for this, just scramble them and add to the cups and put cheese on top....think this is what I will make next.....🤣😋

Mary I save my bacon grease and add it to my beans when cooking it flavors them so well. I too make these hash brown breakfast meals. I like to make my own bacon crumble and it works great and save extra time when making these. I put them in the freezer for my grandson to grab and throw in the microwave while he's getting ready to catch his bus at 6:30 am he has an hour ride to his private school and eats yhem on the bus. One day he asked me to make 2 dozen for his driver to take home so he knew he was getting a good breakfast. So no when I go to visit him in up State New York we have tried making with ham as the base and we even turned the muffin tins upside down and weaved bacon cups up to put our ingredients in this one is his favorite. He called me the other day and asked me how long to bake them . He said that he couldn't wait for me to come visit he needed them for his cooking badge in Boy Scouts. Lol I was just so tickled these has made his top food picks. I loved watching Julia Childs growing up. I pray you and your family are doing well.

One of the PBS cooking shows I learned a lot from was America's Test Kitchen with Christopher Kimball. Lots of kitchen science but also lots of basic kitchen skills.
My dad and I watched a Justin Wilson! He never measured anything. I am very much like that now. I can eyeball most things. It amazes my stepdaughter. I told her it is called experience! 😂
I'm like you, Mary --I like bakin' bacon, too! 😂 😂 Seriously, I have 2 old (38-year-old) cooling racks that I set inside my foil-lined baking sheet, and put my bacon on that. Then, the fat renders off, and I don't have to drain it so long.
These look yummy! I only cook for 2 of us now and wonder if the leftovers could be frozen? It would be handy to not have to cook breakfast every morning!
They refrigerate well. But when frozen, they can get a bit soggy on the reheat. But others have said they crisped up so it’s worth a try. Love, Mary❤️🤗❤️
There is research that says that cooking on aluminum can leech into your food and over time can lead to alzeheimer’s and or dementia as well as memory loss at a minimum. This is because it crosses the blood brain barrier. You could still do the reuse baking sheet to bake fish on a regular non aluminum cookie sheet. Also paper towels are generally full of chemicals so if you want bacon fat off the bacon just put it in a large non-aluminum strainer or cook them on a broiler plate where the bacon fat goes underneath into the tray.

Sounds yummy Mary, but I'm on the CARNIVORE diet now. Trying not to spike my insulin EVERY time I eat sugars & carbs. A pound of potatoes is the same as a pound of sugar, unfortunately. How bout a recipe for PEMMICAN please Mary?
