RECIPES AND INGREDIENTS:
8 oz Rotini Pasta (can also be used tricolor)
4 ounces salami, cut into strips
10 ounces cherry tomatoes, halved (3 cups or 1 pint)
1 cucumber, diced
1/2 medium red onion, diced
8 ounces fresh mozzarella beads (or halved mozzarella balls)
1/2 cup black olives, pitted and sliced
1/2 cup Kalamata olives, pitted and halved
1/2 cup roasted red bell pepper, roughly chopped
1/3 cup parsley, finely chopped
1 cup Italian dressing
INGREDIENTS OF THE ITALIAN DRESSING:
1/2 cup extra virgin olive oil
3 tablespoons white wine vinegar
1/4 cup parmesan cheese, finely grated
1 tbsp mayonnaise
1 teaspoon granulated sugar
1 garlic clove finely grated or pressed
1/2 tsp dried oregano
1/2 tsp dried parsley
1/2 tsp dried basil
Added 3/4 fine sea salt or to taste
1/2 tsp black pepper or to taste
