I first saw these buns in a shopping centre in Malaysia when I went home to visit. Inside the centre, just outside of a shop there was a long queue of people waiting their turns to get their hands on these seemingly humble looking buns so I joined the queue as I wanted to see what the fuss was about. Most customers came out of the shop with at least 4 of these buns but I only bought one...yep just one because I just wanted to satisfy my curiosity. Anyway on my way back in a taxi, I took a bite of the bun and immediately my curiosity turned into regret. WHY DID I NOT BUY MORE!!!??
Ever since I got back to Australia, I've been trying to re-create the buns from my humble kitchen. After a few trials and errors, I'm finally satisfied with my latest effort! They are perfectly rounded, golden brown, soft inside and crisp on the outside and the best of all is seeing the pure, glistening warm melted butter oozing out of the bun when it's being pulled apart! Yummo!
I might also add, this is the happiest video I've ever made because the music makes me get up and do the salsa or samba thingy every time! Lol!

Hi Ms BCC. Does it taste exactly the same as the Roti Boy in Malaysia? Because I too was struck by its great taste when I went to visit my sister in Malaysia. We just got off from the Metro Train and smelled the newly baked buns from the store below the station. From then on, I really love those buns.

Hi I dare not claim that mine is 'exactly' the same but 99.9% close :-) You'll have to eat them pretty much straight from the oven. If you notice they are never sold cold. The topping is like cookie texture which means if exposed to air for too long it'll lose its crispiness. Thanks for watching btw! :-)

+Gizmo b Hi Gizmo, sorry for the late reply. I bought the bread improver when I was in Malaysia. It was from a bakery supply shop in KL. On the label, it just says 'bread improver'. I think they buy in bulk and then re-packaged it themselves. It doesn't have to be any brand. As long as it says "bread improver", it should be fine. Cheers!

i tried the recipe today....i think the water measurement u gave is a lot.the dough was too soft.i had to add more bread flour.and the topping too is not as stif as what we see on ur video.

Wow! How did I miss your comment? It's been 9 months! Sorry about that. Different flour from different countries tend to have different capacity for absorbency. You cannot follow everything to a T. You need to judge with your eyes and in Malaysia we call it 'agak agak' technique! Lol!! As for the butter topping, make sure the room temperature is not warm or hot! If it is, you can chill the mixture in the fridge for a short time. Hope this helps. Thanks for watching 9 months ago! :-)

+Michael Eric Aquino Bread flour gives the buns a better texture as it has more protein content which helps with gluten development. Gluten gives the bread more stretch. Having said that I have in the past used plain flour to make bread rolls and they turned out ok too. Give it a try. I am sure it'll be all right. Maybe not exactly the same as mine but would still be fine. :-)

Margarine does not become hard like butter when it's kept in the fridge or refrigerator. If you can somehow get it to freeze as solid as possible, then work fast before it softens quickly, I don't see why you can't use margarine. Give it a try and all the best! Cheers!

I, too, was mesmerized from the first bite. It was sooooooo airy, flaky and light it almost collapsed between fingers as I bit into it. No matter how many times I tried I never got that texture. Can any one suggest what I need to do?

Commercially made ones will almost always have the advantage. Everything is controlled and consistent, right to the temperature of the room where they prepare, knead, proof and bake the dough. Moreover there's additive in the flour which they use to make the buns so light and soft. If we as home bakers can achieve 80-90%, we should give ourselves a pat on the back! :-) :-)

If you omit these 2 ingredients, the buns would still rise but the texture and flavor might be slightly affected. Only slightly...so don't worry go ahead and bake them. Should be fine. Thanks for watching! Cheers!

Hi, the butter is supposed to melt. You need to have a reasonable amount of butter wrapped within the dough. The buns taste best when they are still warm. Hope this helps. Cheers!

Toward the end of my video, there is a picture of a bun which I've cut into half when it has cooled down slightly. You can see there's butter in it. But if you were to eat it straight out of the oven, the butter will just ooze out when you bite into it. If the butter hadn't seep out during baking and if you followed the recipe and method exactly, I really can't see why yours had no indication of butter in it! It baffles me too! :-) :-)

Hi Mia Lee, thanks for watching. Yes you can swap water for milk but dilute the milk a little bit. Maybe half water and half milk. Cheers!

Hi Logesh, thanks for watching! Since many breads can be made without eggs, you could perhaps substitute it with cream, milk or water. For the coffee topping, it's going to be trickier. I am not sure if you can leave out the eggs. When I get the chance to experiment and come up with a recipe that'll taste and behave just the same without eggs, I'll let you know for sure! Cheers!

Bake Cook And Create I'm logesh I already know what can be use for the topping instead of using eggs .EGG SUBSTITUTION -(1 tablespoon cornstarch+2 tablespoon water=1 egg, 1/4 vegetable oil=1 egg and many more . However thanks for reply.

+Bake Cook And Create Hi, I have questions : 1. Can I omit the bread improver? 2. For the small egg, how many grams for the small egg (including the cell) ? is it 50-55 grams? 3. Since I live in a warm weather ( between 30-34 celcius), do I still need to use warm water? 4. If I want to keep the bread for the next day, what should I do to keep them still moist?
