She doesnt mention the amount of ingredients! And what is chapati flour?
@iainwallington474
@iainwallington474 5 лет назад
@@Fai9aalTS hi buy atta or chakki atta it's chapati flour. For whatever amount of flour you start with you only add as much water to bring all of the flour together in the bowl basically nothing left in the bowl then put dough on counter and give a good kneading about 15 mins. Oh I forgot put in some salt into the mixture.

For years I made nice chapatis, sometimes 200 a day in a restaurant. But never have I seen anyone puff them that way, without moving to hold over an open flame. Thank you so much for sharing that elegant tip!

Puffing it up directly over flame can leave them a bit undercooked from inside..as it puffs up fast that way.

To avoid hard chapatis as you finish cooking each one quickly brush on butter (I use one of those brushes used for oiling a pan) then immediately place the chapati in a plastic bag and seal the opening. I just use a heavy object like a jug to close the opening quickly so I can resume making more chapatis. The heat of the chapati creates steam in the plastic bag and that keeps them soft. I add each chapati to the bag as I make them. They never become hard doing this.

Do try and hope it will work soon, if you dont have chapati flour then always mix a bit of plain flour to your whole meal otherwise it will be too heavy and wont puff up.

I tried like 20 times already, but mine never puff, how do you do it? I use all purpouse 1/3 and whole wheat 2/3 a bit of olive oil, salt, water. Dough is nice and soft, firm enough. I knead it for 5 mins, then let rest for 15 mins. Meanwhile, I preheat a pan on med-hi (4th marker out of 6). I roll out the chapati - about 2mm thin, put it on skillet in about 15 seconds, I see the little bubles, so I flip it.. Then I wait until other side is done - still no puffing. When other side is done, I flip it again, ant with paper towel, I poke it on the sides, but the chapati never puffs... What am I doing wrong? Also, love your channel. Thanks, Adam
