Sorry for my being away so long my friends!! Unfortunately, my father fell terminally ill and I was spending time with family the last 2 months as well as moving into a new house. Mr. Fridge is currently on the way and ill be back to destroying it soon enough. MADE IN COOKWARE REALLY ROCKS AS WELL!!!
does anyone else enjoy eating eggs like this or is it just me and the french?? I ate overcooked eggs until I was probably 23 years old when I learned how to cook them in Europe.

I grew up eating fried egg sandwiches with my father and they were always super crispy and sorry to say but a bit over cooked, I’m now 32 and also a cook, I just wished I could have shared one last egg sandwich, cooked this way, with him before he passed, just to see the look on his face, he would be proud. I started out as a breakfast cook in Canada, I remember those rubbery, super well done omelettes. When I was a teenager, I thought they were good... Then I learned how to treat eggs with respect in France and I've never looked back. Wet omelettes are so underrated.

I added rosemary salt for an egg omelet today. What a game changer!! The lightness of the egg really allows the herbs to come through nicely. Instead of sage and raw garlic I used thyme and fried garlic.
That omelette is PERFECT!! Ordering some Made In cookware TODAY! I’m 73 (still LOVE to cook - try and watch you often!!) and have been searching for many, many years to find the ultimate pots and pans, more times than not buying such inferior pans.😢😡 Thank you! I did not know about the loss in your family. My Daddy was my best friend. I lost him in 1999. I still miss him. Time (and work), as he would say, are the only things that heal. It’s true. Just know and try to remember….you will heal. I pray for you and your family.
Just ordered the Made In 12” stainless. It was the one piece of cookware that was missing from my kitchen. Can’t wait for it to arrive. Paid for the express shipping. Very excited to knock out some scallops in it.

I must say though, nothing is better than All Clad cookware... nothing. There are ways not to pay the full retail price. If it is good enough for French Laundry, it is good enough for me. LOL.
If you only have dried herbs you can do a pre-mix for your spice cabinet with 1tbs parsley.. 1 tbs chives and 1 tsp. or less tarragon. Tarragon is very strong so go easy. My other tip is to use clarified butter to help prevent browning (higher smoke point) . You can also use bacon fat 50/50 with the butter.

I have a Made In pan. Slightly expensive but it cooks every single thing perfectly. All my pans minus the big pot are retired. You can't scratch it. It barely needs oil or butter and cleans in 5 seconds.

My personal preference for steak and eggs is like diner style I got from my favorite loyal diner growing up. Over easy, sunny side up, or even poached eggs served next to the steak. Letting that egg yolk just drip into the steak just makes it next level for me personally!!! with a touch of umami from soy sauce while re-searing the steak in some butter, then using the residual heat and oil to cook the eggs quickly just tastes like heaven. Toast also makes it amazing with all of the left over juice, or even making little sandwhich bites with each bit. I eat this the next morning whenever i get a steak no matter! This is also a great idea btw tha you used. I'm def gonna try it too now.

I don't abuse my fridge, but have cussed out my dishwasher a few times which always makes me feel better. Omlette with steak coming to my breakfast table real soon.
YES. glad you're back! We send you well-wishes and sympathy for what took you away. As far as eating eggs that are softer and less "done", I'm with you. I started eating them that away a few years ago and I can never go back. There is so much more flavor and richness, yet somehow the eggs seem more delicate. It's perfect. My trick is the very second they look like they will transition from runny to solid, I turn the heat off. By the time I plate them, they've cooked just a little more and are perfect.
Holy crap! I just made the omelette part and even though mine turned out terribly because I mixed the eggs in the pan, the Boursin cheese mixed in is sooooooo good. Maybe the best eggs I’ve ever had and I eat eggs almost every day. Thank you!

Iv made my self a lot of omelets never thought to put chives and tarragon and goat cheese, I’m definitely going to try this. Also never thought to roll.
I eat the same thing every day to break fast. 100% whole grain oats, 4 fried eggs. Firm whites, runny yolks. Add eggs to oatmeal. Break yolks. Mix it up. Savory and delish.
