I tried to bake a Bakery-Style VEGAN White Cake

Yupitsvegan’s Bakery-Style Vegan White Cake promises a cake out of your dreams, made fluffy and tender. A simple baking technique called “REVERSE CREAMING” shall do the trick.. Does the recipe really work? I put it to test for you, so let’s find out in the video!

I used two 7 inch cake pans and baked them for 40-45 minutes.
INGREDIENTS:
78 grams aquafaba room temperature
1/4 tsp cream of tartar
Wet ingredients:
2 cups plain, unsweetened plant milk, room temperature (soy recommended, I used almond)
2 tsp white vinegar
2 tsp vanilla extract (clear extract recommended, I used dark)
2 tsp clear imitation butter flavor
Dry ingredients:
324 grams cake flour (This can NOT be substituted with regular flour.)
36 grams potato starch
324 grams white sugar
2 tsp baking powder
1 tsp salt
1/2 tsp baking soda
Fats:
138 grams vegetable oil (not coconut oil)
48 grams vegetable shortening
Ingredients for whipped coconut cream
Hard part from 2 cans of coconut cream
60g powdered sugar, sifted
1 tsp vanilla extract
1/2 tsp imitation butter flavor

Thank you for adding that you are at high altitude!! I am at 5,000 ft and many baking recipes do not work out well without special instructions adjusting for the altitude. I plan to make this for my birthday cake!!

‼️WARNING: The granulated sugar I used in this video is unfortunately NOT vegan! As I found out recently, not all sugar in the United States is vegan. (This is only the case in the states and a few other countries, where most granulated white sugar is refined with bonemeal. So if you are not living here - you most likely don’t have to worry about it.) If you want to learn more about it and what alternatives are vegan read my article about it here: thesimplesprinkle.com/is-sugar-vegan/ For a short answer here, I would recommend using a fine very white certified vegan cane sugar, such as Zulka, as an alternative, or grind your vegan sugar in the food processor until very fine!

Cute channel love your personality just a suggestion though when you make a white fluffy cake you have to use clear liquids everything has to be clear including the vanilla extract that’s how you keep it looking white and fluffy which I’m sure you know that but maybe forgot. Love your channel!

I noticed in the recipe it says you have to use cake flour and I get that but there is a way to make cake flour from regular flour so correct me if I’m wrong but isn’t it true if you take out 2 tablespoons of flour out of the measurements and you add into tablespoons of cornstarch then you basically have cake flour? Because I believe the corn starch stops the cake from forming gluten, yes? Not sure? And then I noticed it calls for two more tablespoons I think or 36 g of potato starch and I was wondering if you don’t have potato search can you just use more cornstarch?

Hi! Thank you so much for your great question! First of all, I want to emphasize that I did not create this recipe, and just tested it. I recommend definitely following the advise of Shannon from yupitsvegan who created this amazing recipe. Making cake flour at home with corn starch may work for some recipes, but is not the same as actual bought cake or pastry flour!! Cake flour is a very low protein flour that's milled into a very fine consistency. It contains about 7-9% protein, while all-purpose flour, a harder flour, has anywhere between 10-12%. Corn starch won’t change that entirely. Shannon from yupitsvegan also elaborates on the other ingredients in this recipe such as the starch you asked for. She says she does not recommend corn starch as it does not turn out AS fluffy, which I would definitely agree with. Potato starch does work better in many vegan recipes, since it often is used as an egg replacement. I am sure the recipe would work with the substitutions you mentioned and still taste great!! However, if you want it to be AS fluffy and AS light as possible - it is best to follow the very thoroughly tried-and-tested recipe from Shannon. 🥰 Read all detailed tips and info from her in her blog article here: yupitsvegan.com/vegan-white-cake/
