Ingredients Required:
Basmati Rice, 2 cups, soaked in water for 20 mins.
Chicken, 3 lbs in small pieces
Green Chilies, 3 diced (reduce or skip if you dont want it to be spicy)
Shahi jeera (or)Jeera, 1 teaspoon
Ginger-Garlic Paste, 3tbsp (Or freshly minced ginger and garlic)
Oil, 3 tbsp (Even Ghee can be used)
Salt, as per taste
Yogurt, 3 Tbsp
Coriander powder, 2 Tbsp
Garam Masala powder, 1 Teaspoon
2 Tbsp red chili (reduce or skip if you dont want it to be spicy)
Turmeric Powder, 1 Teaspoon
Whole Garam Masalas (2 or 3 each of green caradamom, black pepper, star anise, cinnamon stick, cloves)-Can be skipped if unavailable.
One large Tomato, diced
Onion, one small, Sliced
Mint leaves, one handful, chopped (can be skipped if unavailable)
Optional/Garnish:
Fried Onion
Cilantro Leaves
1.Marinate the chicken in salt, yogurt, turmeric powder, ginger garlic paste and red chili powder. Mix well and refrigerate for 30 mins. Adding lemon juice helps speed up the marination.
2.Turn on Saute mode, add oil. Once hot, add, shahi jeera, whole garam masalas, green chilies, onions and ginger garlic paste in 1 minute intervals. Saute well.
3.Add mint leaves and then tomatoes. Saute till tomatoes are soft.
4.Add Chicken and fry till 75% done.
5.Add 2 cups of water and then the drained rice. Check for Salt.
6.Pressure cook for 6 minutes and let the pressure release naturally.
7.Open and fluff the rice. Serve along with raita or salad.
