These videos help me fall asleep. I know how changing gloves can be such a pain in the ass. Use two pairs on both hands, and just change the top one. It's a game changer.
The food looks good and Your an excellent chef. The only thing I would recommend is letting the hash browns go longer. I noticed that sometimes they looked undercooked. You definitely want that golden brown texture across the whole thing when you flip it. I wouldn’t mind waiting the extra time for it

Got massive respect for people working stoves like that. In my town it is a huge issue currently of "People don't wanna work in kitchen anymore cause they lazy". But seriously, not everyone is cut out for something like this, that can go from smooth sailing chill time, to what can be the (organized) chaos of rush hour.
I wish I had a kitchen like yours. My grill is half your size, I have no fryer and I have to cook bacon and sausages to order. Very difficult job, especially sometimes 20 orders at once and only me.
