To answer the question: The chickens in japan have enormous health regulations upon them and eat a highly varied diet including spices such as paprkia (which can add a red, orange or even pink hue to the yolk. The yolks can be held in the hand without breaking due to a superior protein content. Japanese eggs are denser, richer, and sweeter with less sulfur. In fact the health regulations are so high the chickens are raised without antibiotics.

Yes, I very much agree☺ I can remember that my Grandmother and all her sisters, even when younger family members 'gifted' them with electric mixers, they'd smile and thank them...but preferred the whisk or a long-tined fork and a stainless steel bowl or crockery. It was beautiful watching them make multi-layer cakes...breads, biscuits...it was a joy watching them work, and having them teach me the pleasure of connecting to the dish, from preparation right through to the end product. Wonderful.

I love how they take their dedicated talents very seriously! The traditions that were once almost a requirement are slowly eroding. Im Italian and food I make and serve my friends and family has been a way of life and a gesture of love. Clearly these ppl have not lost that belief! 🌹

Ya I'm not sure why he didn't just use a mixer lol. My mother makes weird cakes all the time but I've never seen her do it like this, she just uses a mixer and it comes out perfect. Seems like a lot of wasted effort but I get it, he's a chef and wants to show he's worth the money.

É o que mais chama a atenção. E uma coisa me deixa profundamente irritado com esses sujeitos que mostram comidas no exterior: Nenhum deles dá o nome de nenhum tempero ou ingrediente usado nos pratos. A gente fica querendo tentar fazer em casa mas eles mostram apenas o show, depois comem, se mandam e a gente ainda dá "like" prá eles....kkkkkkkk

omg what effort went into this and all done by hand absolutely amazing. The japanese really do things well and the eggs were of excellent quality as the yolks were really yellow.

i also have to give the chef the super strength for mixing all that the first 2 min me just watching my hands hurt,lol I am also amateur baker,i know the feeling, but i NEVER ever did anything like this LONG mixing with only hands,yea we have a mixer but still, with some things i use hands to mix some things , but this is crazy strength and agility
