Hey Jimmy, audio engineer here. The reason you can't hear the exhaust fan on cooking shows is a combination between the shotgun condenser / lapel mic's that they use, and high compression with a noise gate to precisely eliminate any remaning background noise when they stop talking.
@@KennyKo39 Yes, Ideally they would also use an inline fan, mounted remotely from the vent, but even so, you will still get a significant amount of baffle noise from one or multiple 600cfm fans, so for this they require those extra audio tricks ;)
Not an audio engineer, but musician and occasional stage sound tech and came to the comments to say a much less correct or specific version of this "The crew has uhhhh, gear, to make it so you can't hear the fan"

to get audio like cooking shows wear a lav and use a shotgun mic aimed at the cooking. this will allow you to hear the food and the host without hearing the vent
@@thoriumbrother it was that's why. He is using a decent camera and mic so it's not a phone. So it's not that far fetched that he gets a belt pack and another 2 mics ~300dolars for a good setup and 1000 for an overkill one

Great video Jimmy. This has actually been my favourite dish that I’ve worked quite hard on for the last month or so, like yourself. I add oyster sauce too and it adds a lovely taste of the sea to the noodles. The char of the noodle is what makes it taste like take out Chinese...I’m still working on it.
I couldn't keep my eyes off that empty pot with the burner on and smoke coming up. The moment the fire alarm went off, I was screaming it's the pot, it's the effing pot!

@@qwertyazerty495 you can add it in the beginning sunny side up style and add it when the noodles are done or scramble it in a few minutes before the noodles are done cooking.

I tried making this at home before, failed, and i consider myself not a bad cook. Was trying to recreate what i ate in macau, its such a simple dish but crazy delish
