If you've tried other keto "fries" and were disappointed with the results because, let's face it, replacing potatoes in our diets is one of the hardest things in the keto diet. My recipe here is inspired by Heavenly Fan, a truly great keto/vegan cook who came up published this recently: • How to make keto Frenc... I have to say, I take my hat off to her and hope you will visit her channel where she cooks incredible keto/vegan dishes. Besides making some changes to her recipe, I also show you here how to freeze them and how to cook them from frozen as well as how to revive your leftovers so they're just as good as when you pulled them out of the fryer. I hope you'll try this recipe. It's absolutely the best way to make low carb fries that actually ressemble those made with potatoes! Don't forget to LIKE, SHARE, COMMENT, and SUBSCRIBE!

Hi Tim! Many of my viewers have been nudging me to come here. I thoroughly enjoyed the video and your helpful tips. And thank you for the shoutout. I've recently started experimenting with lupin flour (not common in the UK) so I'm very interested in your views. Do the fries taste bitter at all as you use Lupin solely?

Hello Heavenly Fan! How nice of you to stop by! Thank you so much for this friendly note! As for your question, I don't find things made with lupin flour to be bitter at all, personally. In fact, to me, it tastes a little like potatoes in this dish (although, maybe because it has been quite a while since I've eaten any)! Best of luck to you to you with your wonderful channel!

Nothing relevant to this recipe. But I love the stuff you do, and have used many of your recipes. It's also nice to get measurements in metric too (I'm also from the UK). And it's a great touch that Tim gives his measurements in both U.S. and U.K. standards, for us. A nice touch.

I tried Heavenly Fan’s recipe yesterday. I ventured out to air fry them since Fan does not give instructions to prepare them so. You added valuable info and tips. Thanks for giving Heavenly Fan her due credit because she did a great job. I’m trying it now with lupin 😁

Finally gave these a try - totally sold and my wife loves them! I got the Modern Mountain Flour Company brand that you called out as having tried - no bitterness that I (or my wife) can detect at all. Next batch I am going to try and use beef broth instead of water to try and get some of that old school McDonald fry flavor. It's recipes like this that help the carb addicted stay on a keto diet and not feel punished (which is the hardest part for my wife).

Great video! Just discovered you! You explain things well...maybe a bit quick for me at times, but I am a senior so that is MY problem, not yours !! LOL!!! I have tried these fries before and found that a sprinkle of French Fry Seasoning, from Amazon, or any Dollar Store, adds to the flavour. Just add it to the fries when they are still hot from the frying pan or oven. Mashed Potato Extract, a bit pricey, from Amazon, also fools the palate into thinking these are real potato fries. Your directions on freezing the fries were very helpful. And I would never have thought to try Lupin Flour. Will have to research it !! Thank you for being gracious by giving credit to Heavenly Fan. Obviously, you are a gentleman !

Hi marcia! You're very kind to mention this. JSYK, you can substitute a equal amount of lupin flour for almond in just about any recipe, so do try it in, say, pancakes, cookies, even bread recipes! Thanks for taking the time to make this comment!

Before this recipe I was using jicama and I thought they came closest to the texture and taste of fries. Not anymore!!! These are not difficult to make and the taste and texture is wonderful!!! Less carbs for more fries (which is awesome in my book lol!) Thanks so much for this recipe! One serving filled me up also lol!!!

This is great! I saw Heavenly Fan make this recipe with almond and coconut flours, and was intending to experiment with changing some or all to lupin flour, which is so much lower in carbs than almond flour and coconut flour. I really appreciate that you credited the creator, Heavenly Fan. They should be Called Heavenly Fan fries, just as Diedre is credited with her fantastic yeast bread, Diedre’s Yeast Bread. I love the idea of freezing them too. THANK YOU.

We've eaten some of these with either lunch or dinner nearly every day since I started making this video--and I still have some left in the freezer! @@andresyluisagutierrez6471 oh yeah!! It didn't really work though. I also made a chocolate dipping ganache and idk I ate a few. The monk fruit sweetener still had an odd after taste. Now I'm thinking of making chili cheese fries out of them. I think that flavor will really make me think it's fries. It did taste similar to fries when I dipped it on ketchup.

I saw Heavenly Fan's video about these fries, but hadn't gotten around to making them yet. Thanks for the additional tips, those are very helpful! Two questions: What does lupin flour taste like? Which fries have the most crunch -- the fresh ones you fried in oil, or the frozen ones done in the air fryer?

I can't find lupin flour in the country where I live but I did find a bag of dried lupin beans. I'm gonna try to make flour out of those, but can't seem to find any instructions on how to do it. I hope I succeed. At any rate, I was about to make Fan's version so probably I will try both. I am a huge fan of Heavenly Fan and happy to see someone expound on her recipe. I am not vegan but her recipes are too good to keep just for vegans. I was happy to hear you credit her. BTW thanks for the freezer tips, this is the perfect type of food to have on hand for a quick dinner.

Hi PD! I haven't made my own lupin flour before, but, as with most seeds, you should be able to grind them up with a high-speed mixer or in a coffee grinder. I just made a batch of these fries last night using half almond flour, half lupin and liked them very much! I hope you like them as much as I do! Bon appétit!

@@TIMTalksCooking Making the flour was unexpectedly easy. The coffee grinder worked perfectly but I also have a cheap "smoothy" blender that did an excellent job. I used the flour to use this recipe for churros, which were very good, and also used the lupin flour in Joe Duff's keto biscuit recipe, and both items came out really good. Some people complain about a bitter taste with lupin flour but that is not my experience.

I have milled golden flaxseed meal to use up. Would it work with this recipe, or even half and half with almond or coconut flour? I originally saw this from Heavenly Fan. She does some great food. Thanks for crediting her at the beginning of this video.

Bonjour Rain Maker! Hmmm.... Très intéressante, cette idée! Peut-être bien, hein? Je crois bien qu'on pourrait trouver pas mal d'emplois pour cette pâte. Si on faisait frire les baton (plus large pour des craquelins) dans de la graisse de bacon? Et pour les queues de castor--pas encore, mais vous venez de me mettre la puce à l'oreille! Il va falloir que je fasse des petites recherches... Quelle bonne idée, en tout cas! Merci pour ce commentaire!

Hello there Tim, thanks for making a lupine flour version of Heavenly Fan's recipe (and for calculating the macro's !), will be trying that out this evening. Just one small remark, though: your recipe mentions 1 cup or 113 grs, but... isn't that HALF a cup ?

Well, hello RC! I do hope you like this with lupin flour! As for the measurements, lupin flour is very light and "cup" is a volume, not a weight measure. Wheat flour, for example, weighs 182 g (6.5 oz) per cup, so there is no error here. I've actually learned to double-check since I'm more comfortable with US standard (volume) measures. Most liquids (water, stock, oil) will measure 1/2 a cup as 4 oz., however. Thanks for this question!

Hello deer! Thanks! I didn't. I froze them uncooked, then brushed them with olive oil before cooking them in the air fryer. You can use the air fryer or oven to reheat already cooked fries, though, frozen or not.

Mine comes out all cakey or crumbly before I place it in the microwave; in the video it looks like yours still maintained some sort of liquidity, or creamyness yours looks real lol, mine looks dense. any ideas?

Are you using coconut flour instead of almond or something? If so, only use 1 tablespoon of it next time and measure accurately whatever kind of flour you use. There really isn't any kind of trick here. Bon appétit!

Are they more crunchy with lupin flour? I have made them with almond flour and again with coconut flour and both end up with the consistancy of bannock bread. Not really crunchy. I almost burned them but still couldn't get them crispy.

Hi Neil! I've tried them with almond and coconut flour and found the texture to be pretty similar to the lupin flour ones. One thing occurs to me here: is your oil good and hot before you put in the raw fries? If not, they can soak up a little too much oil and end up soggy (just like potato fries, actually)? You might also try baking them in the oven or air fryer to get them especially crunchy, but if you cook them too long in either of these, they'll turn out like crunchy breadsticks. Not a disaster, by a long shot, but not fry-like, either. Hope this reply is helpful!

How does the lupine flour compare in taste to almond flour? Also, is the air fryer method pretty good? I like the idea of using less oil (because if the expense) when using the air fryer.

I have the same question... Heavenly Fan didn't use Lupin flour so I am curious to know how they taste compared to Almond flour?

Hello marcia! To me, the lupin flour not only tastes a little like a potato, but when you're cooking them, they also smell like them a bit! The almond and coconut flour ones are delicious, also, but there's something especially earthy about lupin flour, at least to me. I think it has the best taste for this recipe.

Hello Duncan! I actually used it here partly because she didn't (I didn't want to do the exact same thing, of course), and partly because I've been experimenting with it in the past few weeks and had quite a bit of it on hand. I responded to marcia (above) that I think they taste (and, during cooking, actually smell) more like potatoes than either almond or coconut flours. Lupin flour usually is ground up much finer than almond flour, too, and makes a smoother dough and more refine final product, I think. All three flours taste really good to me, though, so I shouldn't put too fine a point on this. Thanks for your question!

I use both methods. Depending on the macros I've consumed or plan to consume that day. If I need to get my fats up, I shallow fry them. If not, I air fry them. I hope that makes sense.

Hey Tim~ do you know if there is a significant- or even slight- difference between brands of lupin flour? I've noticed that some look more white, some yellowish or even a pale gray color. Maybe it's just the lighting in various photos, as I've not purchased any yet- & that's actually why I'm asking. Thanks, in advance, for any info you may have on this =) ~Samantha in AZ

Hi RVthereyet? Good question! I haven't noticed a color difference, but I have noticed a difference in the number of net carbs between brands--not dramatic, but enough to make me have to recalculate the macros for the recipes involved. No taste difference between them, so I'm not sure what to think. I even asked about this on the comments space at one company, but they didn't post an answer. Strange...

Hello Latoya! I'm SO GLAD you asked! The answer is simple, but it took me a while to figure out--and I was pretty proud of myself when I did. You have to weigh the oil before and after frying (as well as the paper toweling used to absorb the excess oil from the fried product). The amount of oil missing is what ends up in the food. Not bad, right? 😁

Hi Joyce! They do! If they don't, put them back in for a minute or two and they should crisp right up. The same goes for when you reheat cold ones in the air fryer.

These look really good. I watched Heavenly Fan's recipe but your dough looks like it's easier to work with, maybe because it's lupin flour instead? I'm wondering if you've tried using a mixture of lupin and almond flour instead of all lupin? Thanks for posting this variation.

Hi there Cuttooth's Room! Good question! I haven't tried combining the flours (almond or coconut with lupin, that is), but I don't see why it wouldn't work. Personally, I think the lupin flour fries have the most potato-like taste, though, so I'm sticking with that for the moment, myself!

@@TIMTalksCooking I made a half batch following your recipe this past weekend and really like them. I'm not much of a vegetable fan so never did enjoy all the other "french fry" facsimiles. One other thing I did with a small bit of the dough was make them into gnocchi shapes to see how they'd turn out, not bad but a little dense in texture, I think i'll try playing around with it to try to get the texture right, i really miss gnocchi.

I did. After watching Heavenly Fan I did a 50/50 mix of almond flour and lupin. Dough worked great. Fried them both in a pan and some in the air fryer.

So would I air fry them for the same amount of time if I was doing it directly after making instead of from the freezer? Edit: and would using almond powder change the amount of time I should cook them? Haven't gotten to try them just yet as no air fryer and am not the best when it comes to cooking.

Hello Michael! Thanks for these questions! To cook unfrozen fries in the air fryer, yes, they'll take about the same amount of time. Make sure you coat them with enough oil to keep them from sticking. The cooking time, to answer your second question, shouldn't be affected by which type of keto flour you use, but rather by the size and thickness of the fries. Don't be afraid to give them another minute or two if they're not browned or crispy enough for you.
