Recipe for Chicken & Vegetable Soup with Lentils

3 medium Potatoes
1 cup Red Lentils
1 cup frozen Peas
2 celery stalks (thinly sliced)
1/2 cup chopped Cilantro
1/2 cup corn kernels
1 bunch Spring Onions
1/2 cup shredded carrots
1 small to medium size Chicken Breast (cut into small pieces)
1 teaspoon Garlic powder
1/2 teaspoon Ginger powder
Salt & Pepper as needed
5 to 6 cups Water
Method:
Add all the ingredients into a heavy pot. Boil for 30 minutes on high heat. Turn off heat. Leave pot closed on the turned off stove top to cook further in its own heat to soften the vegetables until they mash easily. After about 2 hours use the back of a spoon to mash the vegetables. Soup will thicken even further the next day as the potatoes breaks down. If blending and it is too thick, add a little water to thin down the blended soup.
