Whole Food Plant Based Meal Prep with me! Today we're prepping about half a week's worth of veggies, beans, grains and more! These are all the things I like to make to have on hand throughout the week, and basically... my weight loss staples! Sometimes I make full meals to have ready to reheat, and sometimes I just like to batch cook items separately. Today we're batch cooking to have lots of healthy staples in the fridge, ready to eat. Investing in a second instant pot liner was one of the best decisions ever. I can cook things one right after the other without having to rush to wash and dry the pot before moving onto the next dish Hope that makes sense!

Hello great video, I love these meal Prep videos of yours. I find if I don’t prep then I fail. I have recently lost 33lbs in six months eating this way, however I have 15lbs more to lose. I’m so excited to this. I work from home so you would think I’d have all the time in the world to have lunch. I do not, it’s only 30m. After animal care, doesnt leave much time. Having things prepared would really help. Thanks Maddie!!

I buy the same tofu. I keep it in the freezer which changes the texture to a more sponge like consistency. Once it defrosts - it’s crazy how much water you can squeeze out easily. Then there’s room to soak up a marinade.

Love that tofu from Costco! Haven’t seen it recently though. 😔 Yes this one had been in the freezer! Love that trick. It does release a lot more water that way (and therefore soak up extra marinade like you mentioned!) 🤗💕🌱🌱

You should invest in a quality bamboo steamer. Ours has a 2 stack tray and you can stream a lot in it. Thought you'd benefit from that instead of batches.

can't wait for that yummy cheese sauce recipe!!! when I bake sw taters I just cut the tiniest bits on either end, then bake very long & slow at 350F for about 1 hr to 1-1/2 hr, depending on how big they are. the slow roasting seems to make them extra sweet. I've never had to poke them as that releases all the sweet juices. I do poke my regular taters before baking. hope that helps!

I cut ends off my sweet potato too. 💜Love that I don't stab myself like I use to do when I tried to poke them with a fork! Plus the ends always seem in-edible so I am already getting rid of that part.

Unfortunately I’ve never had potatoes exploding in the oven before otherwise that might be a fun experience! (or not really! 😂) But as a tip it’s good to boil potatoes for like 5 minutes before baking them as that gives them some moisture and prevents them from being dry. I like to make a cut in the middle of potatoes because I think they cook more evenly that way. 🌱

Aw thank you! So glad you enjoyed! 🤗 So a lot of the bok choy (and other Asian greens we buy) get used by my husband in noodle soups or rice bowls. Yes! I have them! 😋😋 I have been told not to use them for any oven temps over 400F. Not sure if that’s true or not (or maybe just my brand??) but I generally follow that and just use parchment paper for higher temps. 😄 Planning is definitely the first step! It does take some initial planning but I find with this system at least I don’t need to plan down to every meal ... just enough staples to make a few different kinds of meals. It helps if you’re not too picky for meal combinations! When cooking for Q I do have to keep that in mind. Lol! 🙈🙈

In all my 65 years of life, I've never had a potato explode....until last year. All over my brand new Brevill smart oven air. Yes, it happens. Good thing it was easy to clean up!

OMG same here. I rarely bake potatoes and totally forgot to poke mine. Thought it was urban legend too. Potato all over the inside of the oven. Took the lazy persons way out and waited until the exploded bits dried up in the oven and then just vacuumed up. 😂

The easiest way to remove gas producing compounds from bean is to soak overnight in boiling water and rinse well before cooking .it will reduce cooking time in half and no gas..

Great tips! When you roasted the bell peppers.... did you roast them for a total of 20 minutes and then take them out and rotate and set the timer for more minutes? Thanks

Thank you for this video. Curious about your oats. So I guess in the morning you take a scoop of those oats, maybe add water or milk and then microwave, and stir really good? I need to try this. I just make a fresh batch every morning and I am ready for something faster.

Yes! In the mornings, we just microwave it and add a splash of plant milk. I will also add any other fresh fruit on top if we have it. Usually a banana, or sometimes some fresh strawberries. 😊🍓🍓 But yea, I have found microwaving it just makes the mornings so much faster! 🤗 I have a sauce video in the works!!! Lately I’ve just been making a cashew cream (just cashews blended with water) and adding some hot sauce and making the cooked food into Buddha bowls. Heat up the grains, beans & cooked veg... and then add any cold veg on top (like grated carrots, celery, lettuce, etc.). Sometimes I’ll do an oil free dressing if it feels like a salad (vinegar, mustard and maple syrup) or I’ll do some salsa if it’s a Mexican style bowl, or some soy sauce if it’s an Asian inspired bowl. I do keep them pretty simple, but I definitely want to make a video to show some dressings and sauce options! Glad to know you would be interested in that. 🤩🤩

Thanks for the vid! For the steel cut oats, what is the ration of oats to water and cook time in the instant pot? It should be simple but I've had trouble with these: used too much water and the cook time was too long. Can you advise? Thanks again.

You're welcome! For regular steel cut oats I usually do a 1:3 ratio, grain to water. (I used to do 1: 2.5, but my husband likes them a little "creamier" so I've started adding more liquid... but either ratio should yield a "not too liquidy" result!) I cook them for 4 mins. on high pressure. OR if you're using Quick Cooking steel cut oats (like Bob's Red Mill... they changed their steel cut oats to be quick cooking), then cook for 1 min. on high pressure. Let me know how it works for you! 😊😊

Excellent video and food prep Maddie. There must be something wrong with your potatoes and sweet potatoes if they explode in the oven without being pricked because I haven’t had exploding potatoes and sweet potatoes before and after I became vegan. It's probably because I have always pricked them.

Do you still do the salt-water rinsing? Or have you reverted back to normal water rinsing (without the salt water soak I mean)?

Good question... I've reverted back to normal rinsing! The only thing I do now for rinsing is that I will use vinegar for berries. I do help it prevents them from going moldy too quickly! So 10 mins. in a water + vinegar bath, then rinse and quick soak one more time in cold water. Keeps them fresh for a while! 🙌🏻🙌🏻

@@metamud8686 You know… I remember rereading Dr. Greger’s recommendation for the salt water bath and it was quite a good amount of salt!! With all the veggies we eat I’d be going through A LOT of salt. That was a big determining factor for me. 😄

Thank you for the comment and great question! My husband eats A LOT of bok choy. 😅😂 He uses it mainly in noodle soups or in his rice bowls. But I do have a video coming out soon that shows how to use items I prepare separately during meal prep because a few people have asked! So glad you enjoyed the video too. 😊🌱🌱

Hi there! It’s just for 2 people, myself and my husband. But quantity is definitely an important feature to pay attention to! It’s something I teach in my meal prep course because often I see people either prepare too much or too little. Definitely helps to plan ahead how much you will need for one person. 🤗🤗

The salt wash seems like it would add a ton of sodium to your diet. I prefer a vinegar wash.

Oh you rinse the salt after soaking! All the salt gets removed. 😊😊 I used to do vinegar as well but after reading the info from Dr. Greger I switched to the salt. Supposedly it removes more than vinegar! I put the link to the info in the description of the video if you want to check it out. 😄

The salt wash is my preference just because its cheap and simple, and use vinegar sometimes for salad veggies. I make up a bottle of salt water and keep it on hand.

Hi there! Yes they do! Most cooked things will stay fresh for 5-7 days, if I know we’re not going to eat it all, I’ll freeze it before then. Chopped veg that have been lightly steamed will stay fresh for 7 days, but we usually eat them all before then. Keep in mind it’s for myself and my husband! Haha no problem! In this video I had broccoli, sweet potatoes, bell peppers, bok choy, yu choy and gai lan. I think they are also called Chinese broccoli and/or Chinese kale. Here in Toronto it's easy to find them in the Asian markets. 😊
