The desert southwest meets comfort food with a unique twist on meatloaf!
Just before posting this video, Linda fell out of the truck and broke her foot!
This has just made a challenging holiday even more challenging! But, she's a tough old bird and feels like she can persevere. She doesn't want to let any children down that are possibly waiting on deliveries from Grandparents.
~Ingredients ~
~ 1 lbs. Ground meat
( we used organic Bison)
~ 8oz. can tomato sauce
~ 1/2 c. Italian flavored bread crumbs
~ 1/4 c. chopped onion
~ 2 eggs, beaten
~ 1 package taco seasoning mix
~ 1tsp. graphic powder
~ 1 jalepeno, seeds removed and diced
~ 1 tsp. Liquid smoke (opt.)
~ 1 cup fiesta blend shredded cheese,
divided in half
~Directions ~
•Combine everything except 1/2 c. of shredded cheese in a bowl.
•mix really well
• place in pan, cover and bake, slightly
raised for 2 hours.
•uncover, add remaining 1/2 c.
shredded cheese, bake an additional
15-30 minutes
~Optional~
Serve with guacamole, pick de gallo
or sour cream.
