We are in the beautiful village of Peterhead on the easternmost point in mainland Scotland! Peterhead is one of the busiest and most important ports for fishing in Europe, and today we are on the mackerel vessel "Chris Andra". It only makes sense that I am cooking up a delicious mackerel fillet with lentils while on the ship's trawl deck! Enjoy.

Great video once again Bart! I love your onlocation videos; and love the settings you choose when creating them. I absolutely love your work. It has been about a year and a half since you told me some tips to creating a cooking channel, and only a few days ago I uploaded my first video. You are such an inspiration. :)

Hi Keith! My favourite sustainable fish are scallops, wild(!) salmon, Icelandic cod & haddock. I'm able to travel to many places because I am a fisherman by trade in a way that I buy and sell fish directly from fishermen. I actually own my own brand "Fish Tales". We sell sustainable seafood in The Netherlands, Germany and the United Kingdom. I also write cookbooks and make videos for RU-vid and sometimes television, the relationship with these amazing fisheries and fishermen and women is what brings me to these beautiful destinations. I know a lot of these amazing people personally for years and years, so sometimes it's almost like visiting friends! You can keep frozen white fish for about 6 months, oily fish would keep for 3 months, including fried fish. But I would always check the internet or ask an expert who can tell you about a specific piece of fish. I hope this answers your questions! Thanks for watching Keith

This is an interesting one, we have mackerel quite often for lunch but have only tried puy lentils in a stew one time, still have the remainder in the cupboard. Trying to eat a bit healthier too, very challenging but will dig the lentils out of the cupboard and see how we go. Thank You Bart.

This is such a different and interesting way of cooking lentils. We eat a lot of lentils in India but almost always we pressure cook them to smithereens and they never retain their texture. Usually used to make different kinds of daals. I will definitely be trying this one. Thanks Bart.

Bart's Fish Tales - No we do not. Lentils are the primary protein source for most of the vegetarian population in India. At least one meal a day in almost all parts of the country will contain a lentil curry of some form (daal/sambar/rasam/curry etc.) which is eaten with rice or roti (a kind of whole wheat flatbread). More than 20 different types of lentils are used across India and most pantries and store cupboards will have at least 10 of them at any given time. They are never had with fish though. This is the first time I've seen a recipe that combined the two and I liked the idea.

i do cook too but you can use this kind of low end pan and stove to pan fry the fillet to this golden brown, you really make me feel how poor i am :)

Hi Bart! I'm always confused when frying the skin. Do you remove the scales (schubben) of the Fish always?

Yes! They are not edible. But, most of the fish you buy in the supermarket is already descaled. If you go to your fishmonger, you can ask them to do it for you.

In English they call it a legume. It's in the same family as beans, peas and peanuts. They can be dried and then rehydrated with water, so you can keep them and eat them during the winter. They contain high levels of protein and fibres. They are realy good for you. They can even replace meat when you're a vegan or vegetarian.

lentils are kinda like chickpea, the only difference is that you dont need to pay $200 to get a lentil on your face.

I loved the video, I also have questions. Will this recipe work with a different yet healthy fish? If so, what would you recommend? Also, why did you leave the papery skin on the garlic and the thyme stalks in the pot at the end? My apologies if I'm asking too many questions.

Thanks for watching! This will definitely work with a different fish, you could use some nice salmon. I left the skin on the garlic and thyme because their only function in this recipe is to give their flavours to the lentils. I took them out before serving so you don't eat them. You can never ask too many questions! Thanks for watching. :-)
