How do I store it without causing it to collapse? Where I live there is a lot of humidity and last time it collapsed :(

You could store it in an air-tight bag once it’s dried with silica gel packets. Or just eat it and make a new one next year ☺️

If you find a recipe without a leavening agent(baking soda) they will last longer. I kept on for 2 years in Central Florida. Look for a structural recipe not just an edible cookie one
