Hello Mary, I'm not sure you will ever have time to read the replies, but I am posting my end results in case someone else can use the results. I have come down with the "bug" going around at work. It must be a flu-like ailment because I was aching, and my head was miserable. The Everclear wasn't a good choice nor was the high proof Vodka. Everclear is very bitter and way too strong without diluting. The high proof vodka was not as bitter but still VERY strong and both needed a good deal of diluting with water. I added hot water (1 oz) to a small plastic cup (3 oz) and some local honey (1 teaspoon+) to dissolve the honey then my 1/4 teaspoon of the Star Anise tincture. (1/4 teaspoon is equal to 2 droppers from the 2oz dropper bottle.) Pretty successful but still potent. I seriously DO NOT recommend taking the tincture without diluting higher proof alcohols, burns like h*llfire and the pleasant Star Anise is semi-lost. The 80 proof also needs diluting but is easier on the tongue and tastes better. The Star Anise does add some sweetness to the tincture. So, if you don't want to go looking for your tongue and save some $ get an 80 proof vodka. BTW 2 days of using the tincture 3 times a day for 2 days and I am much better.
Something I learned from a vanilla extract forum is that not all the compounds we want to extract are alcohol soluble but require water, so Everclear won't draw out as much flavor as vodka or another lower proof alcohol. Vodka is a nice neutral spirit that is still mostly water (80 proof is 40% alcohol, the rest being water), so it brings out more flavors and is far more palatable in the end instead of having a harsh alcohol bite. White rum is another option.
Everclear or other 150-190 proof is only suitable for fresh plants. You do not want to use that on dried plants as the alcohol will be too harsh and not enough water content, which will destroy the beneficial constituents of the plant. Always research what % is best for that plant depending on what you are tinctureing, and the plant itself requires different alcohol vs water content. I personally use diamondclear which is 190 proof made from organic sugar cane and I dilute to the needed % needed. I love making traditional chai with star anise, as well as cloves, cardamom, and black peppercorns. It's such a warming and comforting drink. My family is recovering from covid, and I felt too unwell to brew my chai. Having a tincture pre-made is a smart plan. Thank you for sharing!
Have you tried making a larger batch? I just throw everything into a large pot after thinly slicing some ginger and quickly crushing cardamom pods with the side of a knife.
I had surgery overseas and a sweet Taiwanese friend steamed slowly beef with star anise in a small bag about the size of a large family dx tea bag and I healed so quickly, she was my angel for sure!!!
Great tincture idea! It's one I don't currently have on hand, but I will make it asap. I'm an herbalist and yes, you can use Everclear--although I never do. I don't like the idea of using tinctures (especially regularly) made with such a high alcohol content. That being said, I do use 100 proof vodka. 80-90 will work, but I like 100 proof as a personal preference. A note about Everclear...In past times it was hard to extract constituents from materials like resinous substances, barks, roots, etc. with anything other than very high proof alcohols. Now, we can use high speed blends, etc. like a Vitamix or Ninja to break those materials down to smaller pieces, allowing more surface area to be exposed and therefore easier to extract in 80-100 proof alcohols. This is another reason I use 100 proof and avoid Everclear.
@@spicycopper2436 I think that would work, as long as your grinder is strong enough. You could also use something like a Ninja or Nutribullet type grinder. I'd only put 3-4 star anise in at a time to test your grinder.
Just dilute with distilled water to whatever you solution you need. Simple. Id go with the highest proof possible so you have more versatility. For example,, If you have a 190 proof just use a 1:1 water to alcohol and youll end up with like an 80 proof.

I’m on week five of the lingering cough. This one’s a doozy! Wish I’d made tinctures earlier. My ND recommended hyssop and osha tinctures. I think Mary did a more recent video that included hyssop. It helps release the cough so that it’s productive. I’ve been using it in the morning and find it helpful. Feel better soon!
Jamaican rum is excellent for tincture and caribbeans have been doing tinctures for donkeys years. Little did we know how important it was. Blend the residue and use in your cakes or goulash absolutely delicious and healthy.
I have a big bin for containers I save...all shapes and sizes. My cat sleeps on it and when i get something out of it or put a container in the bin she doesn't even move anymore! 😂 😻

I made this & it came out well. Looking back I would have picked out the pretty stars that were whole. Since the herb ended up getting thrown out after I stained it.
Hi, Everclear should not be used because it is straight alcohol and does not allow the water-soluble properties of the anise to come out and be used. A lesser percentage is recommended(40%) if you want the fullness of its properties. Thank you for the video.
Erverclear or other high proof can be diluted down to the needed %. I use Dimond clear which is 190 proof and dilute down to 40, 50, 60, and 75% depending on what I am tincturing.
I could have used this video last week. I'm sick now with a bad cold (Day 7) and I'm finally kicking it. 😅 But I plan to make a batch of this for later. They say that once you catch a cold you're then immune from another cold for 6 months. After that you can then catch another cold.
Mary, I would think canning jar wise for storing the tincture, one could use one of those darker color jars, like maybe the purple ones or green ones. or maybe there are darker ones. Those were made in a limited amount. Thank you for your video.
Good point😊 I was given some colored mason jars but I don’t like them for canning because I want to watch what I can. That being said I am using those jars for tinctures or extracts (the purple one have elderberry in them)
Thanks for the info. I’ve got several tinctures going, but have never tried star anise. (I have a sweet gum going now which is a lesser alternative.) For leafy plant materials I also use vodka. Everclear is definitely harsher, so I save it for tougher materials like star anise, bark, roots etc. I’m not sure it makes a difference, but I’ve read it a couple of places and it made sense to me. -Natalie
I always use Everclear for my tinctures because I believe that is the best medium to extract the maximum amount of beneficial compounds from the item you are making a tincture from.
Hello Sweet Friend Mary, I am loving and enjoying your vlog. Easy to listen to and easy to understand. I have been making tinctures for a few years now and have found some good alcohols to use. I use a vodka that is oddly pleasant ( I don't drink either). Its call Devil Spring's vodka and is 151 proof. Yes I use Everclear also when I want a "hot" tincture that I can use very small amounts of but still have strength. I use fresh herbs from my yard so strong is ideal for fresh herbs. So many ways to get to the end. Money is always a concern so I buy the best I can afford. I am also treating my pets so I will use low proof alcohol and glycerin.
This is just like making vanilla extract. Yes you can use any 40%+(80 proof) liquor to give a different flavor profile. This tincture/extract is great for making candies, desserts and sauces.

I thought 100 proof is the standard for tincture???? I went to shop liquor store, the seller was making vanilla extract with 100 proof vodka. When I asked if they carry 100 proof vodka, he understood immediately I wanted to make extract, not for my drinking. W😂
Love it!! LOL!! I have always used 80 proof only because it is easy for me to find. And I believe that Rosemary Gladstar says that any high-proof (80% or higher) alcohol works for when making tinctures. Love, Mary
Everclear is commonly used for tinctures/extracts but it is BEST diluted with distilled water to reach 80-100 proof. There are two proofs of Everclear, 151 and 195 (I think). So, the math on how much distilled way to add is different. Also, many have heard about Everclear, but the same thing exists made from sugar cane.
@@MarysNest Mary my dear since you are on a roll making tinctures, you may want to consider making a clove tincture, which is a magnificent spice that can be and is recommended for tooth infections and tooth aches and any fungal and bacterial infections. It includes pneumonia and the common cold
P.S. I do use Polish Spiritus which is like everclear but much higher quality, it is double the potency of vodka. Prefer that because there is no chance of anything surviving and the tinctures are much more potent, the Polish spiritus draws the plant properties really well and you need to need take a lot less of it to be effective so it lasts a lot longer and serves more people at once if you have a bigger family
I made this tincture and it's ready just in time. I caught the flu. I put two of the strained vodka star anise in my coffee. It's soooo good. Tonight, I am going to try some in my Chai tea. Thank you for sharing this tincture recipe. ❤
I just got my Star Anise so I made 3 small jars of tincture. One with high proof Vodka, one with Everclear and one with 80 proof vodka. Just because I can I guess because other than taste testing I have no way other than smell to judge its final result. Kinda fun yes? BTW I put one seed pod in my car just because its smells so good.

Great show!!!!! I have heard (this not absolute) but tinctures made with alcohol will be good 10 years and made with glycerin will last for 2 years and with apple cider vinegar will last for less than a year....just what I've found in my research!!!!
Hi Mary, I found a huge jar under my sink. I put it there 2 years ago about. I was watching your channel back then and it looks like I put my apple pealings and raisins in this jar and just closed it up put it in the dark. I don't live her all year, so I forgot about it. We had a leak under there today and my husband set everything on counter and I thought wow, I will have to throw that out. When I looked at it and smelled it, there was no mold and it smelled great. I strained off some of the liquid and tasted it. I did not die. 😅What did I make can you tell me? It's taste like alcohol but sweet and very flavorful. Please tell me what to do with it. I remember something about putting the apples and raisins in baked items. Did I make whisky 🤔

80 proof is best for most if one we're to use everclear then it needs to be water down to get it to 80 , 150 proof or higher is not recommended to be honest on this stuff. Hope this helps
Hi Mary: This is off topic, but I am new to water bath canning, and am seeing discrepancies in how long to process at elevation. Would you go with what the pressure canner manufacturer says in the manual, or would you go with the National Center for Home Food Preservation. What do you think is the most reputable place to find this information? Thank you!
That’s a great question. I would go with what the manufacturer states because the NCHFP may have used a different canner than what you have. The manufacturer most likely tested their canner and made the appropriate recommendations. Love, Mary

Glycerine and vinegar do not extract all of the active ingredients. Some herbs like lobelia require both alcohol and vinegar to extract the properties. A vinegar is also good for many herbs but they are different than an alcohol tincture

It's actually pronounced, "STAR ANN-is". That's the only pronunciation I have been able to find in any language. It's not "STAR ah-NEECE"..... That's an incorrect pronunciation.
