In this video we speak to Josh Eggleton, owner and chef patron of the Michelin Starred Pony & Trap Pub in Chew Magna, just south of Bristol.
Recently voted 8th on the Top 50 Gastropubs list, Josh breaks down what it takes to elevate the humble pub lunch to a world class culinary level. From fresh, homegrown produce to hyper local, high quality meat, cheese, and wheat sourced for the surrounding Somerset countryside.
Josh also talks about the food and culture in the Bristol area, how he like to support local artists and how he believes the local restaurants, bars, cafes, pubs, and bistros make for the best food in the country outside of London.

This was a beautiful video. I live and work in the heart of wine country in Northern California and that Bristol countryside makes me green with envy, pun intended.

I really think this guy is better farmer than a chef.

This is why he won a Michelin star? I would also change his dishes, especially playing, but amount of passion he puts in is great and I appreciate it a lot.

What are the locations in and around Bristol in the first 45 seconds of this video? I studied in Bristol from 1991-1994 - epic memories of the place! I am now in San Francisco!

Hi Ravi R! These shots are mostly filmed in and around Clifton (coloured houses/Bridge) as well as Harbour side/Wapping Wharf/Spike Island. There is also a few shots from Stokes Croft, Park Street and then the Countryside bits are from the Chew Valley area. Bristol has gone through extensive redevelopment in recent years and has become a very exciting place for food and general culture.

I love eating in and around Bristol and have lived here for 30 years. I’ve been to the Pony and Trap four times. I just don’t understand why it has a Michelin star. The food is simply not good enough. I’ve got nothing personal against Josh and his team.

Because as michelin states, to get a star one needs to be a great overall restaurant in its category. Says nothing about just food man. Its the experience, atmosphere, and thought that goes into every dish. I don't understand why you would ask that question unless you don't know what you're talking about
