We decided to leave out first airbnb which was thought to be more posh, to a simpler but nice space still in Accra. The first day we arrived we found a local making a popular street food Banku for dinner. Outdoor cooking is a popular sight in Ghana, as it's a quick way to earn an income.

Banku remind me of fungi, turn cornmeal, cou-cou, polenta, coo-coo, fungie what ever name people call it in the diaspora but it always go good with okra and fish...it is always so funny to see how the diasporas still keep their African meal so alive even if they used different spices in their areas...the big different is the diasporas is not into fermenting that cornmeal but Ghanaians do make it with fermented maize.

If you look up Angolan Funge, it’s the same thing consisting of Turning the cornmeal and eating it with meat. I believe that’s another country we can credit towards the dish. 🇦🇴

What is the difference with banku, fufu and kenkey?

@@aziboo Fufu is typically made from boiled cassava and unripe plantain. Fufu can can also be made from cocoyam (taro) or yam or simply cassava. Banku is made from fermented maize and cassava. Kenkey comes in many versions as well, it is made from fermented maize. The most common versions are Ga kenkey wrapped typically in maize husks. Fante kenkey is wrapped in plantain/banana husks. I say maize because it is white and corn is north American and it can be yellow.

Ibby, the banku starts to cook when u leave it alone with the extra water, and let it steam cook...u asked how he knows its cooked,, u know, when the colour starts to look translucent, and also, u taste and it doesnt taste like raw corn meal. I just like so much that u actually made the effort to try and turn it! Hahaha! It's quite laborious, but not too hard to make, it's just an acquired skill, judt like learning your how to cut and eat fufu, just an acquired skill all your life! Now, u are a bonafide Ghanaian! Congratulations!

@@davidscott3726 Jamaicans have too many other dishes to choose from. Turned cornmeal used to be something that was eaten by the very poor, when there was really nothing else available - hence why it’s not been popular for many decades because of the wide choices now available to everyone.

It is also used to lift the pot too(those metals) but the main function is to keep the pot still And the grinding is done in a front and back or up and down motion rather than circular

SOAI congratulation on you and Jilly exploring Ghana. I like that 3 feet pot with the 2 ears, it reminds me of my grand mother’s iron pot that she had when l was was a child. Where would l get one of those pot to buy now. I also like the square coal stove , l hope someone in Jamaica would make a copy of both, that would be nice. Keep Up The Good Work. Blessings.

I know where you are living at I use to work around there Kanda estate was built by KWAME Nkrumah he wanted to move the people of NIMA to Marina a suburb of Accra so he started building from Kanda then he was overthrown

You can get cash from the GCB , the foreign branch in Accra central, Stanbic, Barclays bank or SSB if you have a debit card with you. Just tell them you're withdrawing from your foreign account. I do that when l go to Ghana. Your bank will charge you a fee, be aware of that. You can also get a relative or a friend send MoneyGram or Western Union which you can cash at most banks in Ghana with your passport. There are also several Jamaican associations in Ghana when it comes to a critical situation, you can contact one of those and l believe they may help and you can remit the money back to them when you come back. You're doing a great job. Keep it up!

Banku is a corn doe + a lil of cassava doe turned while cooking. Kenkey is also like Banku but with a fermented corn doe turned, put it in a leaf and cooked. Fufu and the other part is cooked cassava and plantain pounded together.

Man Ghana has a lot of food for you to discover this food you are seeing in this series is just one part of it , for example the Muslims community has their own ways of cooking and believe me their foods are so so good if you go to Ghana don't limit your self in just 1or2 arias you will miss a lot the best African foods are in Ghana !

Banku with soup, you can swallow. Banku with pepper sauce or stew, you have to chew cos then its a little sticky in your mouth.

Cooking in Ghana is quite a labour of love,,,almost all the meals are quite laborious to prepare, that's why the sauces have such layers and layers of flavour. I wish u had the opportunity to see how your favourite groundnut soup is takes quite some time to make.
