Shin is the most gorgeous tasting part of the whole beast imo. The flavour is immense, and the gravy you can make from the juices (from all that sinewy material breaking down) is delicious.
I don’t eat meat but I tried unsuccessfully to make Pease Pudding - I always wanted to try it as Rose Elliot, the veggie chef, said it makes a very good vegetarian Sunday lunch, but unfortunately the legumes I bought - yellow lentils, just wouldn’t cook!! I said to my sister - they’ve been on the cooker top for near two hours and hard as rocks in the middle, and my sister said:-“Oh dear. Beans on toast, anyone!!” I bet Mary Berry can make it successfully, she can cook anything.
Not a bit of steam came from that pie dish when she cut into it and she was using her bare hand to steady it when she took a portion out - clearly the oven was stone cold and the pie already cooked and cooled down
