● Bread dough
200g Bread flour
1 teaspoon of dry yeast
20g sugar
3g Salt
30g Whole egg
20g Unsalted butter
100-110 ml Milk
● Matcha bean paste
160g White bean paste (Shiroan)
3g Matcha powder
・ Primary fermentation until about double (about 1 hour at 30 ℃ / 86℉)
・ Divide into 8 and take a break for about 15 minutes (bench time)
・ After wrapping, press down to a diameter of about 8 cm and make 8 cuts.
* I cut the remaining 4 places slightly shorter than the first 4 places (cross).
Molding by sticking the neighbors together at the bottom (Please refer to the video as it is difficult to explain)
・ Spray to prevent it from drying and perform secondary fermentation until it doubles (about 50 minutes at 35 ℃ / 95℉).
・ Apply beaten egg to finish and bake in an oven preheated to 210 ℃ / 410℉ for 10-12 minutes.
