I soooo agree!! I'm so overdue for a chat video!! It's been a hectic couple of months at work so I've just struggled with taking time to sit down and chat for a bit. Kristi, I have been wanting to share a breakfast idea with you. I enjoy it and hope you try it and like it. I cut a zucchini into thin rounds, cook them in a skillet sprayed with cooking spray. After they brown on one side I turn them over add beaten eggs and cook like an omelet. Sometime I add cheese, slide it out onto a plate and enjoy.
Funny I made an egg bake this morning! Sweet potato, feta, spinach and asparagus! After cooking asparagus and sweet potato, I cooked all together with the eggs. Creamy fajita pasta for dinner!

Delicious recipes as always! For your eggs, I love to add in a little non-fat Greek yogurt, non-fat cottage cheese, a little ricotta/cream cheese/goat cheese/laughing cow cheese or even a little hummus into them. It makes them creamy and fluffy and adds a little extra flavor and protein.
Great meal prep ideas, thanks for sharing. Personally I would have mixed the feta and eggs, then add in the potatoes, then baked the whole thing.Much easier I think.

Meatloaf in a crockpot! I've never tried that! Have you ever added potatoes in with your meatloaf when cooking it? If so, how did that turn out? I may need to try that next week!
No!! I have never thought to try throwing some potatoes in with it! I may have to try that next time. If you try it next week, let me know how it turns out!
I usually do anywhere between 3 and 6 ounces, depending on what it is. For beef, I tend to do 3 or 4 ounces. For chicken, I usually do a little more. It's just a matter of what is the serving you like and then taking the points for that serving. :)
You are not the first one to say that! I need to try to figure out a way I could do it. It's one of those things I'm worried I'll try to commit to it and not be able to keep up with it. Also, I have to be careful that I'm not "prescribing" a meal plan, so to speak, since I'm only a nutrition coach and not an actual dietician. Definitely don't want to overstep there. :) But I'll look into it for sure!
