far be it from me to question the master.. but... im sure the idea of rapid infusion with an isis whipper is to use the NO charger to push the negroni into the wood chips... Then you need to rapidly let the gas out so as the pressure expands in the whipper the negroni comes out of the wood chips very fast along with the flavour. ISI isnt that why u do a rapid infusion kit for this purpose. thanks.. love your work..
Yes and no. You can do it faster and more intense than this method by just repeating the pressurize, then depressurize workflow a few times. The point here is that while forced in the wood, it exchanges faster, it will not be as strong as doing the intense method, but it will be stronger than just leaving it all soaking. You save up some money by not using that many cartridges, but you lose on time needed.
