Traditional Nyonya Stew Chicken
Ingredients:
• 5 pcs Whole Chicken Legs.
• 4 pcs 2” Length Galangal.
• 20 Shallots.
• 3 pcs 2” Cinnamon Sticks.
• 4 pcs Star Anise.
• 2 ½ tsp Salt.
• 1 ¼ tbsp Cooking Oil.
• 600-700ml Water.
• 150ml Gula Melaka Caramel.
Preparation Method:
• Grind anion till fine.
• Add oil in the heated wok, stir fry onion till golden brown.
• Add in cinnamon stick, star anise, crush galangal, stir till its aromatic.
• Put in chicken meat turn few times till meat slightly shrink.
• Add in water till cover the meat, pour in dark soy sauce, brown sugar caramel, salt & stir occasionally.
• Leave it to simmer till the sauce turn slightly thicker & meat becomes tender.
• Off fire, leave meat to cool down.
• Chop the meat & serve with homemade chili sauce mix with chicken stew sauce.
Chili Sauce
Ingredients:
• 100 gm Fresh Red Chili.
• 1 Clove Garlic.
• 1 ¼ tsp Salt.
• 150ml Vinegar.
• 5 tbsp Sugar.
Preparation Method:
• Grind fresh chili & garlic till fine.
• Boil together all the ingredients in a pot on medium fire till boiling.
• Then remove & let it cool down.
• Chili Sauce can be stored in refrigerator.
