OLD SCHOOL LEMON MERINGUE PIE
recipe:
5 large egg yolks
6 Tbsp cornstarch
1 1/3 cup sugar
1/4 teaspoon salt
1 1/2 cups whole milk
1/2 cup lemon juice
2 teaspoons lemon zest
2 Tbsp butter
for the meringue
1/4 teaspoon cream of tartar
1/2 cup plus 2 Tbsp white granulated sugar
5 large egg whites (room temperature)
1/2 teaspoon vanilla extract
In a medium-sized saucepan, add 6 Tbsp cornstarch, 1 1/3 cup sugar, 1/4 teaspoon salt, and 1 1/2 cups milk, and whisk to combine. Bring to a boil on medium heat, whisking constantly. Let simmer for 1 minute. The mixture will begin to thicken.
Once the cornstarch mixture has thickened up well (consistency of Cream of Wheat) remove from heat. Take a spoonful of the cornstarch mixture and whisk it into the beaten egg yolks to temper the yolks. Continue to whisk in spoonfuls of the cornstarch mixture until you've used about half of the cornstarch mixture.
Then add the egg yolk mixture back to the pot with the cornstarch. Reduce the heat to low and cook for a minute, stirring.
Remove from heat and stir in the lemon juice, lemon zest, and butter. Add to cooked pie shell
For meringue
Whip egg white untill soft peaks
Slowly add the sugar and cream of tar tar untill stiff peaks
Top on pie and brown in oven

“The reason I use milk is cause my mama used milk.” Haha I love every minute of this. All of my elders have passed on and I wish they would’ve shared more recipes or that I would’ve taken more interest when they were in the kitchen. Can’t go back in time so Uncle Old School will do!! Lol

Chef. I am new to your videos and have learned much. May I suggest something? On this video, you did not tilt your nicer back enough to show how the egg whites should look before adding sugar. When you cut your pie, your hand (thumb, I believe) covered the pie when you wanted to show how the pie should look in the tin, after cutting. So, we really didn't see what you wanted us to see. In a couple other videos, you accidentally have your back facing the camera, so all we see is your back, instead of what you want us to see. Apart from that, I am very impressed with your menus and abilities.

Chef Jeffrey Chef Jeffrey Chef Jeffrey.Just make this in a deep dish pie shell. OMG. I usually buy jello instant pie filling but decided to try from scratch. This is far superior than that box mix. Thanks so much and my husband thanks you also. This is his favorite pie. Gooon with your bad self.

Chef Jeffery your ingredients made two pies I'm only making one what's the measurements for one pie and can I use a gram cracker pie instead of a regular pie shell . Thsnks

Wow, so that’s the secret!! Room temperature eggs and a clean oil free bowl🤣🤣🤣!! I love lemon everything but,I have always made lemon cream pies. I have always been intimidated by meringues I think I’ll give this a try. This looks delicious 😋. Thanks for sharing, I love ❤️ all of your amazing videos and the simplicity of your teaching style👍😇

Chef, this was my first time using milk versus water while making these pies, and it came out watery after baking. My thought is the meringue may not have been thick enough? Any thoughts?
