Pasta with white Chianina sauce A SPECTACULAR FIRST COURSE!
From Tuscany and more precisely from Arezzo here is a very tasty first course, the PICI AL RAGù BIANCO DI CHIANINA. Delicious, tasty with an enveloping flavor, this is a ragù that you cannot fail to make, today I used Pici, but you can do it with any type of pasta, the result will always be extraordinary.
These are the ingredients for 4 people:
350 gr of pasta (in this case Pici)
400 gr of. minced meat
1 carrot
1 stick of celery
Half onion
1 clove of garlic
1 bay leaf
1 sprig of rosemary
1 glass of red wine
1 tablespoon of tomato sauce
Extra virgin olive oil
pepper
For the rich broth:
1 carrot
1 stick of celery
1 small onion
1 potato
1 tomato
1 courgette
the rind of Grana (or other aged cheese)
A handful of salt
Extra virgin olive oil
